Need cooking advice for my new Wolf R364C charbroil/gas range

I have finally done it. As a present to myself (and hopefully for my family too), I have just installed the Wolf R364C range, and on top of it, a 36" inch across and 24" deep PRO wall hood (900 CFM), aslo made by Wolf. The only reason I did not do the 27" depth version is that on the advice of many, I did not want to bump my head too many times. The height of the Hood is 35" above the range.

So, here are a few questions for this newbie:

1) Should I use the "reverberator plate" that was included for the charbroiler? Supposedly it makes a more even cooking. I plan to grill meat, chicken, fish and veggies. Would love to hear opinions and expriences.

2) Any tips on the best way to wash-off dirt tfrom the charbroiler after I am done cooking?

3) Can someone please suggest a good stainless-steel washing liquid? There are so many to choose from (at Home Depot, Lowes, etc). I want to make sure that I keep the range as clean as possible, without damaging to early in its life.
