Different convection settings

How do the different convection selection modes differ, and does it really matter which one you use? I have convect bake, convect roast, convect cook, convect cookies, convect casserole, convect turkey, and convect frozen pizza. It seems like overkill to me, and just easier to push convect bake for everything. Am I missing some great cooking theory here? So far, I can't tell the difference in what I make, but then again, maybe it's just my cooking. :)
