Why do many mid level pro-style ranges not have a stainless cooktop?

Why don't they sell knobs to the general public?"<<< Actually, some models of restaurant (aka "commercial") induction cooktops and ranges do have touchpad control interfaces and there are numbers of knob controlled residential induction appliances. For a commercial example of a touchpad controlled appliance, there are the Cooktek "Apogee" units used in restaurants as high-end as Grant Achatz's Alinea in Chicago and the Ducasse restaurants in Paris. For "knobs sold to the general public," recognized major brands with knob-controlled induction models include the GE Cafe models that I cited in my previous post, Electrolux/Frigidaire's "Gallery" slide-in induction range and some of the induction ranges the company makes for Sears to badge as Kenmores, LG's induction slide-in range, and Samsung's induction slide-in ranges. Boutique brand models with knob controls include Viking's induction range and some of its cooktops, Blue Star's induction stoves and cooktops, AGA, Bertazzoni, DCS/Fisher & Paykel, Verona and Ilve. Gagenau (a divsion of the Bosch BSH conglomerate), offers some models of cooktops with unique knob and glass controls. The extra depth worked perfectly for me b/c I design ALLLLLLL my Kitchens w 30" deep counters ;) That said, you could do 30" for the cabinet (even if it's just an 8" spice cabinet) on either side of the range to help integrate an 'extra deep' oven. YES! Pots + pans not fitting was a huge issue for me. Thankfully, not anymore! I also use a lot of commercial-sized pots and pans, so am very happy w the depth of the Caliber range. I think the 'spoon rest' also helps - not just as a handy place for spoons, but for extra deep pots and pans to have breathing room. I haven't used the broiler, but the oven yet. I still don't have a completed Kitchen, so haven't fully been able to utilize all the things! My thinking is the same on the salamander. Oven seems to heat well - AND EVENLY! Which FYI I will also say for the 'star' burners - the entire pan, no matter how big, has the same bubbles when I cook, which tells me the pans are being heated really evenly. I did make Macarons - a very fussy little cookie - and the second batch (my mistakes on the first batch) turned out even and perfect. Comments (20)Hi Jennie - we have a Kitchenaid counter depth. It’s now 12 years old now so this is not current info for you. It has broken down twice. The inside cannot be easily configured and there really is not a lot of storage. I think it’s about 24 cu ft. We at first couldn’t find someone to repair it and looked at replacing it. To avoid messing with the cabinets it would have been a $12k fridge to fit the space. I hated being locked into the space restrictions and did not want to replace or re-do the cabinets. Luckily we found someone who had a rebuilt “motherboard” (not sure if that’s the correct term) for $2200 so we repaired. Ultimately, I feel it’s just a waste of money, especially these days when appliances don’t last. Perhaps SubZero is still good or other premium brands. But the SZ we looked at that might fit was $16k. We found nice fridges for under $4k but of course they would not fit. I have had terrible luck with all my Kitchenaid appliances as they all broke down at one point in the past years. I think I can blame it on a special “builders package” offered when the home was built. But I’m burned now and, right or wrong, I personally won’t buy Kitchenaid again. Comments (5)My husband and I are both in the 1% who prefer a gas cooktop. We have the Cafe 6 burner and it works fine now after about 4 service calls and a trip by the gas company after it was installed. I think all higher end ranges have some degree of problems that have to be worked out - difficulties getting a service rep out is a real thing. We like ours now but it was a pain in the butt to get it working right. I'm still not 100% sure it always does. Good luck....See Morehvtech42
