New CC Owner - what do I need to do on receipt?

Hello All,

I've been reading this forum for a few months now - mostly lurking ... I've read most of the range discussions and was swayed by those advocating for open burners over closed ... As a serious home chef (intend to attend CIA when I'm fatter, richer and happier ;-), I finally pulled the trigger on a Capital Culinarian 36" 6 burner manual clean range (CGMR366) ... I'm expecting delivery in a few weeks but It won't be installed immediately as there is a total kitchen remodel going on ... I assumed the plumber sub would do this install - is this correct/advisable? ... this being my first "professional" level range, what do I need to know about having it set up? ... I'm concerned about the simmer issue I've been reading up on - how do I ensure that this isn't a problem before signing off on the install?

Get the shortest/highest btu rated gas connector that will fit from you gas supply line to your CC.

They sell pro-grade range gas connectors at Home Depot and Lowes.

The chief engineer at Capital says you should be ok with a 1/2" pipe gas line but some have chosen to replace with 1" or 1.25".

It can be expensive to change gas lines.Not so much with gas connectors.

Simmer. The burners need to be calibrated properly. It seems as much an art as a science. You won't really know until you start cooking if they have been properly calibrated. I guess you don't know what a properly calibrated simmer flame looks like on a CC until you actually see it.

Thanks deeageaux ... when you say "highest rated BTU gas connector" are you talking about the yellow tubing or some sort of fitting that attaches to the gas supply line? ... I'm guessing the black pipe from the wall is roughly 1" in exterior diameter ... is it rated by interior or exterior dimension?

First, "sand" in a lot of bonsai books originating in the east actually means 'river sand', which is very small pebbles like you'd get in a river bed, but don't rush out looking for them over here as they don't equate to what's over there. Sand as we know it, however, is definitely not a good idea for various reasons. Secondly, instead of pumice, I'd add some organics, bits of pine bark mulch of 1/8-1/16" size, but not acquired 'wild', better to go with some from a nursery or even a bagged Orchid Mix (tho' you'd have to break up those soft wood pieces). Instead of Akadama, which is expensive, you can use Turface, more readily available and cheaper. Unfortunately, Chicago is too cold to just leave blk pines out all year, so they weren't a great choice, but there are various options you might look into for winter protection in future (don't even think about putting them out this yr). I say all this because you may not realize that no pines will survive any length of time indoors (except, hopefully, your seedlings, til late spring) and must live outdoors for life. Pines of any kind are definitely not beginner material anyway, so good luck with the future of them, Your best bet for 'potting' would be a training box - simulates in-ground growing better than any pot but is still portable, though it's too soon to even put them in one of those. What is really important now is to keep them in a cool, very airy place with lots of humidity - not sprayed on but either on stones in a wide tray of water that never, ever touches the pot bottom, or even a cool mist humidifier. They won't be ready for 'bonsai' training for 3-5 years at least, so you'll have to do what you can to keep them alive that long. gdnh, The small upper pond will likely freez near solid and stop the trickle of water. To winter fish in the pond, you need at least 24 inches of water depth and to maintain a hole in the ice to let gass exchange from the pond water. Please review the other resent post topic, about deicer question.

Fairly often, and if I find an undercharge, or too much change, I call it to their attention. Several years ago, when the scanners came in rather than the sticker with the price on each item, there was a bunker with frozen fish on sale, with a placard showing the price per pound over the bunker. When I checked the price on the item, the amount per pound was different/higher. I called it to an employee's attention, he said that the price on the placard was when it had been on sale, the day before. I told him that I should get the advertised price, he said that the sale price was no longer available, I insisted ... he ended up agreeing and so marked my package. I walked around the store for ten minutes or a quarter hour, returned to the fish bunker ... and the sale price placard was still up. I asked for the store manager, called the situation to his attention and told him of my suspicion that there was duplicity afoot. That we used to have the price on each item that was going through the register, so could check. As it is these days, we almost need to write down the price on the shelf for each item, to check with the receipt. I don't often find errors on the receipt ... and I do find that the line item for sale goods usually lists the reg. price, then the amount of saving on the discount below it. ole joyful

Make sure you get a survey too even though you are paying cash. You want to know exactly what you are buying and in order to remove MANY title exceptions, you need a survey. Since you plan to build anyway, you will need a survey. Survey's are good for a long time. I think 10 years but it could be longer. Read the title commitment too. Make sure you read the entire commitment and ask for the cover of the title insurance policy to review because that is where the standard conditions are in addition to Exhibits A and B. Make sure you understand the exceptions. Make sure the title company removes the survey restrictions prior to closing if you get the survey. I have seen title companies fail to do that and it is not a good thing. Best advice above...get an attorney to represent you in this purchase. Another inexpensive solution to the problem of "you don't know what you don't know".

Before you get it hooked up, i would complainer about the simmer.

*I am not a plumber or gas expert but from what I gather....

It sounds like you have a standard gas supply line.

The fitting is 1/2".

You want a 36" gold/yellow tube with 1/2" fittings rated at 125K BTU/HR at 4 psi. The plumber/installer will recommend 48" tube to make life easier on them. Then you are left with 106K btu.If you are one of the rare people that don't have cabinets on both sides of the range you might be able to get away with 24" tube rated at 150k btu/hr. Keep in mind some of the standard range connectors are rated at 65K btu/hr or less.

Most homes are at 7 psi.

You would have ~125k BTU available in worst case scenario of the standard water heater,standard gas dryer and standard furnace at full throttle.Under normal circumstances you would have enough gas for your CC to go full throttle.If you have gas fire place(s),massive furnace, or something unusual like a gas powered refrigerator you may need to upgrade the gas line.

Remember not only the 23K btu per burner but the 30K btu oven and 18k btu infrared broiler.

The only way to know for sure is to know the pressure and flow of your supply from the gas company and sketch out the supply lines throughout your house. Get the btu/hr ratings of all your gas appliances and do the math.
