What should I choose? Induction or grill?

Hello All,

I have the opportunity to choose either a 36 or 48" cooktop for my kitchen.

If I were to go the 36" route, I would get the Wolf Rangetop with the Infrared Grill as I think a grill would be good to have indoors.

Alternatively, I also am considering the Wolf 4 burner drop-in cooktop and getting the 15" Wolf Induction module next to it (total width 45").

Which one would think would get more use/ enjoyment? My cabinet designer would prefer I stick with 36" as it would free up more cabinet space and counter top space.

I don't want to go all induction BTW as I have some non-stick pans I would still like to do. I guess the induction module is to try to be "green" as well as for use when boiling water. I do have All Clad stainless steel pots and pans as well as a Lodge cast iron skillet.

I've seen negative threads about Wolf's noisy induction as well as Wolf's infrared grill being only one setting (HIGH) or off.

With that said, I'm curious to know what you would pick. I do like the "look" of the range top" with the beefy red buttons against the stainless steel frame.

how about a grill, gas , and induction hob from wolf, then you can have everything.

As long as those non-stick pans are magnetic, you can still use them.

I remember that thread about the Miele Induction unit. I really wish that the OP had come back and let us know if it was ever resolved. Her unit was behaving very oddly, and I really think Miele had the responsibility to fix it. If mine behaved like that, I'd hate it, too. I felt so badly for her. That said, I did have a learning curve on the Miele touch controls, they kind of annoyed me in a minor way for a few weeks until I got the hang of it. The problem was that I was pushing the controls instead of just resting my finger on them. The kids, the husband--they all had no troubles at all, so I knew it was ME and not the cooktop. :-) At this point, it responds just fine to my touch and I have no issues with it. If I rest something over the controls for a few seconds, like a hand, a towel, or a pan lid, the cooktop beeps at me and turns off. If I brush my sleeve across it, or quickly wipe a towel across it to clean up up a spill, it does not shut down. I don't recall ever having it shut down due to a grain of rice or small piece of food--it would have to land just right, I'd think--and a large enough piece could affect it. Just last night a family member had a large boil over on pasta, and we picked up the pot, quickly wiped off the mess, put the pan back and it just continued on without shutting down at all. This cooktop gets very heavy use, as I cook everything from scratch, daily. I love being able to set a separate timer for each burner and use that function all the time. Most people who get induction seem to like their units, no matter which one they get. I chose the Miele because I liked the hob layout and I liked the feature set, and there was absolutely nowhere on the cooktop for crud to get caught and hide. (this was a a problem on my old stove, which was the bane of my existence!) Good luck with your decision!

Isn't it a relief to get a choice made! Judging by the long running threads on the GE induction ranges (formerly the PHS925/PHB925, now the PHS920/PHB920), I think you will be pleased with your selection. Three more points may bear a little further discussion. Stir-fryi makes a good point about matching pan and burner size for best results. For thin, watery things, (making stock, boiling pasta water, etc.), it does not matter. With thick sauces (say, marinara or ragu) and when you want the most even heating for searing and sauteing, the rule of thumb is pan bases no more than 1" larger in diameter than the maximum burner size. (Remember that pans are rated for size across the top and its the base you want to look at. Also, remember that pans vary, and some larger pans with thick bases may do a better job of spreading heat than thinner pans.) Smaller diameter pans aren't usually a problem, although a pan might be too small. (That teeny, 3½" diameter moka pot probably won't work on the biggest burner.) Otherwise, just because somebody refers to the the large hob as "power burner" doesn't mean it can't simmer/melt. As silken1 points out, big burners often can simmer fine. Second, bear n mind when setting heat that induction is a lot more efficient and a lot faster at heating than other ranges. You often need to use lower heat settings than you would expect on other kinds of ranges. And, as often is said here, don't crank up a pan and turn your back on it until you've worked with inudction enough to get a sense of how quickly pans come to heat. >>>So, the same company will be doing repairs to the GE model If I go with that one."<<< Well. . . . ., not exactly. Although most appliances makers still have in-house customer support staff, that's mostly e-mail and chat support. Much "on-site" warranty repair work is outsourced. Depending on what product you've got and where you live, you might or might not get an actual factory-tech and you might or might not have a choice of servicers. GE was one of the last major manufacturers with in-house warranty repair employees. However, about three years ago, GE started outsourcing some service. It signed an agreement with A&E (a Sears-Whirlpool joint venture). Some servicers have better reputations than others. Stone is beautiful in part because of it's variation in tone which gets completely obliterated with paint. In my personal opinion, painted stone fireplaces generally look cheap or dated. Instead I would recommend trying a greige/taupe wall paint color that is more harmonious with the stone of the fireplace and the warmer carpet color. Additionally, you can always repaint the painted walls if you don't like the color, but you can't really go back once you ruin stone with paint.

I have an all-clad 12" non-stick skillet for the last 9 months and it gets used daily on my induction range. I love it. I wish I could afford another one.

There are certainly plenty of non-stick pans that are ompatible with induction, although they are mostly the higher-end variety, rather than the cheap light weight weight aluminum teflon-coated pans.

My fave fry ultimate fry system consists of cookware that is perfect for induction and gas and are made by the high end German company Fissler. The Ultimate Steelux Set MSRP $329 contains four items - two of Fissler's best fry pans and two accessories to enhance their uses. Coated with Protectal Plus, an 11" diameter non-stick sealant that is rock-hard and nigh impossible to scratch is free of all harmful contaminants found in other nonsticks. Then Fissler 11" diameter Steelux is a deep frypan with rounded edges to facilitate easy flipping. The 11 diameter inch Crispy Steelux frypan has a unique interior Novogrill cooking surface that allows food to be grilled without the use of oils or fats. The regular fry pan is perfect for high heat coooking, such as steaks and other things, while the non-stick is perfect for lower heat cooking applications. Both frypans are suitable for use on a variety of stovetops including induction and are fitted with comfortable handles. I gave away almost all my All-Clad cookware and have replaced them with Fissler in both their Pro collection and their Intensa collection. They are so far and away the best cookware I have ever used it is mind-boggling.

Anyway, this long prologue is mostly meant to make the point that one should almost never make their cooktop decisions based on their current pots and pans, unless that investment is in the thousands of dollars.

I would likely get a 30" or 36" induction with either a high output gas hob for stir frying and/or grilling. I don't know why I mentioned grilling, as induction under high heat is better than gas. Only grilling over an open flame would have advantages, but the mess inside would be astounding.

When the weather is foul, I grill inside with my Fissler 11" high temp pan on induction and get great results. Obviously in nice weather I go out on the deck and grill on the Kalamazoo gas grill. I also use the 60,000 BTU side burner outside for wok cooking, as that requires far more heat than any available gas indoor burner permits.

Henckels makes non-stick pans that are induction compatible. I bought the 3-Qt when I needed a slightly smaller saute pan. I wanted to be prepared if I went the induction route. The lid fits beautifully & the handle is very comfortable. The price was quite reasonable, too.

Thanks for everyone's input. I think I'm going to go with the induction as I see more of a daily/weekly use than the once a month grill.
