Can someone help me understand shear wall!

Got my wind analysis from engineer today and there are several shear walls shown. In the shear wall table it shows that most shear wall areas are sheathed on both sides. Any recommendations on how to get drywall to match up? Should I just use furring strips or cover the whole wall with plywood and then drywall? Also can someone explain to me what a cast in place stem wall is. The plans call for cast in place stem wall anywhere there is a simpson hold downs and it looks like the are 30 or more.
