scorched stainless steel bbq hood

Duck in rotisserie left unattended caught fire last night in my new bbq. Also the housing of my rotisserie motor fell apart from the heat transferred from the rod, sigh.

The hood discolored ontop where the flame was concentrated and for some reason the backside is black as well as the bottom front looking brown and overheated, the little rubber bumpers melted off too:(.

Once everything cooled down I got out some aoresol SS cleaner but Id like to restore it to a reasonable facsimile of its previous condition.

When I searched out stainless in this forum I saw vinegar was recommended. Can I expect to retore this hood using vinegar? Anything else ? I saw an infomercial on some 12 pack of the bullet pellets that were for dipping SS pans that came to mind.

Thanks in advance to anyone with some encouraging advice.

Personally, I doubt vinegar will restore the hood. The best I have found is a powder called stainless steel magic... and believe me, it does require a LOT of elbow grease to make the transition from clean to shiny! But I have restored pans to like-new after DH burnt beans into a solid inch of charcoal on top of grey and that funny discolor that SS gets when it's been overheated. Lots and lots of elbow grease; is the BBQ really worth it? any chance you have insurance to cover the mishap? because it really sounds like replacement is needed more than just cleaning up.

I suspect the black backside and probably the brown front are mostly soot from the over-smoked duck; consider them grease and yucky-stuff, and clean the top layers off with household ammonia and paper towels before trying powders or other stuff.

Im sure I saw Johen Eakes DIY personality recommend ketchup for polishing copper. Would this be because of the vinegar content or the acid in the tomato? I tried it on my pan and didnt like the result, seemed blotchy because i let it sit on.

I ordered a long cover for our VAH b/c it was in stock and wasn't going to take as much time as a custom-length one. I did what chris_harper2 mentions- the duct and cover stick up in the attic about 9". I forget how I marked it before cutting the ceiling. I'd think it'd be pretty easy to make a template out of cardboard or plywood that'd be rigid enough for your purposes. Besides, a little caulk covers slight misses. Our flue cover, IIRC, has corner reinforcement tack welded at the ends. Cutting would've meant getting rid of the reinforcement and having a less-rigid cover. Also, if you're only talking about 3/4", you could take the hood loose and drop it just enough to mark the ceiling. To me, those options are simpler than finding someone to cut it and not mess it up. FWIW, plasma leaves clean edges, but I'm not sure whether it'd scorch. If you do slide the cover above the attic, I'd make a cover to go over the opening. Then foam or otherwise seal it in place so you aren't venting your kitchen into the attic except through the duct. I made one out of plywood and cut it in two so that I could put it over the top of the duct cover (and around the duct) after the whole thing was installed. Here is a link that might be useful:

I have a 36" AG Wolf with 21" riser and shelf. Our hood has warming lights. Answers to your questions: 1) Does the shelf get in the way of the hood doing it's job? Yes to some degree. It deflects the upward movement of hot air/steam/grease and we get a little less capture than with the riser off. The riser is flanked by cabinets on either side which may contribute to dispersing the air flow. For really smoking grilling, we remove the shelf (never bothered to screw it down). Hood is 27" X 42" 600 cfm VH; a more powerful hood might fix this. 2) Does the shelf and everything on it (e.g. utensils, plates) get greasy or dirty (from any cooking effluent)? Not to any noticeable degree. 3) How often do you clean the shelf? and how hard is it to clean? Not very often other than a very quick wipe with a damp paper towel after stirfry or other smoky cooking. once, twice a year take it off and clean in sink with fantastic spray or soapy water. 4)Do you find the shelf useful? or would you reconsider the decision if you had to do it again? Absolutely--used to work in restaurants and got used to using one, primary use is with the warming lights and a landing zone for spices etc. Without warming lights I'd probably just have a partial wall mounted shelf for spices etc., without the full riser shelf. 5) The panel and shelf - are they better attached to the range or mounted on the wall? Could go either way. I'd consider using an island mount for the range, tile or SS for backsplash and hinged, fold-up shelves attached to the wall. I haven't seen a range mounted SS riser that hasn't scorched where it's not just a trophy range, and the additional space on the rear burners would allow larger pans. A 12" pan is a little off center forward due to the riser. Conversely, the oven (at least on ours) vents through the top of the riser which is a benefit.

I have an early model (before Fisher/Paykel) open burner DCS with a 12 inch back guard. I thought it might be a problem when I first got it but it's been exceptionally easy to keep clean. I don't bother with special cleaners. I just use a damp microfiber cloth. It turned out to be so easy that I went with a full stainless back splash with chrome warming racks instead of the tile I had originally planned on in the area. The first 12" gets most of the spatter. I would never want tile there now. We are in the middle of a full remodel and I am cooking without the back splash or a hood currently but even without the hood the riser is no problem to keep clean. I do fry a lot too. My range is a workhorse. I don't obsess about it looking showroom fresh. But even with the neglect it comes clean with water and a cloth. The only part that gets cleaner is the oven. I take apart the top every month or so and clean the nooks and crannies again using plain water and a microfiber cloth.

I was looking to spend between $1000-$2000... Not interested in name, only quality unit, even cooking, safe design for grease. My current cheap grill had the burners too close to the grease tray that also did not drain properly... I cleaned it almost every other use, but it still caught fire. chulaman, that looks great!. I assume the hood and stainless backing allow the grill to be used under roof and against the house? I am not sure if I could get away with that in my town... I think it has to be x ft from house and not under roof. After 1 grill fire, I am designing my new grill/island far from any combustible structures... I have seen some that have cast iron grates, ceramic grates and stainless steel grates... what is best to cook on? Do grills not have the lava rocks any more? I thought they were helpful in keeping the heat more even.

The acidity of ketchup does act as a cleaner on copper. Personally, I think the results too undependable. If you want an effective home-made substance, take a small bowl and put a couple tablespoons of salt in it; add just enough lemon juice to make a thin paste and scrub with that. Rinse well. Remember that air oxidizes copper -making it turn greenish or brownish- and the copper will re-tarnish rapidly. If the copper or brass is decorative, a lacquer finish will protect the metal; if the copper is on a pan or similar food item, then you might as well accept that frequent polishing will be a regular part of the cleaning process. I love copper for cooking, but I decided a long time ago that it wasn't worth the trouble of keeping pretty -- I now buy copper only if it is covered with stainless steel.

I tried a bunch of things but I guess the window cleaner foam with this plastic kind of scouring pad worked to about 85% completion. Someone recomended a pumice stone cleaner with pam spray, available at bbq section of home depot. I tried it on a back corner combined with the foam cleaner but saw some scratching.

Stainless metal properties could have changed after overheating. Keep in mind these home fixes and best guesses, like scouring salt and lemon paste. If you scratch it with any metal products like scouring pads it will rust later much faster. The tiny metal fibers will be left to rust into the stainless. I would stick to the liquids and pay the money for actual stainless cleaners made for a barbecue. The stainless paste used on fridges is more like a wax and would burn when heating up on the Bbq. I was a welder and we had stainless steel brushes for cleaning the metal, if you used a normal wire brush you could see the rust scratches withing two weeks. I have managed with very hot soapy water and rub with a lint free soft cloth, then another damp cloth to polish dry. That gets the grease, but the liquid polish would make it pretty...but that won't last very long.
