venting questions

I'm wanting a GE Monogram 36" professional gas cooktop with grill. Specs say I need at least 600cfm vent, but I think I read on here recommending higher cfm. Problem is, says contractor, is that he can't go out the top and will have to do down and out (basement). Guess I should've mentioned my dream range/cooktop before construction :-)

Anyone familiar with exhausing up first (into the hood), then down and out? Should I give up on the cooktop and settle for something less "needy"?

I have to know what I'm doing, appliance-wise, so I can get the cabinets ordered. Things are moving sooooo quickly now.
