Open vs sealed gas burners

Well it seems that we want a gas range with features not available on the market: 36" AG or DF range, sealed burners, all or most burners low simmer mode, single cast all SS top (vs black porcelain -- been there done that and prefer SS), and self-cleaning. We'll compromise on the fuel type for the oven and even self-cleaning (ugh) but not on the all cast SS cook top under the grates (one piece not seams along the side.) Perhaps we're being too demanding. The one piece SS cook top part only seems to come with open burners (Viking and maybe Wolf.) Do any residential cooks have recent experience with open burners? Sealed burners are a no brainer so it's a trade off between the black smeary porcelain surface which takes too much to time to maintain and the open burner that is possibly even more hard to clean. We're really not clean freaks but get tired of grease-smeared, dusty black tops. Thank you in advance for any suggestions.
