words of wisdom about custom range hoods?

We are embarking on a major kitchen renovation but keeping our very large old range and putting a small induction cooktop alongside it. So we'll need a large custom hood (tired of grease flying around the house and lingering cooking smells), in our 100-year-old house. It should function well, obviously, and look nice, in a turn-of-the-century industrial way. It should be steel. We'll run an (exposed) duct to the outside, I think. Any advice on how best to achieve this? Do we first spec the "works" for the inside and have the hood built around it? An architect is designing the project. Any thoughts about different fabricators?
