words of wisdom about custom range hoods?

We are embarking on a major kitchen renovation but keeping our very large old range and putting a small induction cooktop alongside it. So we'll need a large custom hood (tired of grease flying around the house and lingering cooking smells), in our 100-year-old house. It should function well, obviously, and look nice, in a turn-of-the-century industrial way. It should be steel. We'll run an (exposed) duct to the outside, I think. Any advice on how best to achieve this? Do we first spec the "works" for the inside and have the hood built around it? An architect is designing the project. Any thoughts about different fabricators?

If you want a custom hood in something like galvanized steel, you might look in the Yellow Pages for a metal fabricator in your area. Chances are, they've worked on similar projects for restaurants or other commercial enterprises in your area. Your architect might also have contacts, or know of someone he or she could inquire with. Restaurant installations are almost always custom work produced locally.

You might also look into Vent-A-Hood. They make stock hoods up to 66" wide in a variety of styles, including several that would be appropriate for vintage or country style kitchens. Otherwise, Vent-A-Hood will do custom range hoods of any dimension, in any number of styles, metals and finishes, including the extraction blowers and lighting in a package deal. They also manufacture liners for custom installations like built-in wood or stucco hoods.

I look forward to seeing your reno - it sounds exciting! I agree with wa8b's advice except I would start by making a trip to a local restaurant supply & ask for their recommendation for a metal fabricator. I did this on a piece of custom stainless & the fabricator did the work while I waited (I had the plans with me & it was a very small job, but still....), the price was reasonable, & the quality was superb. And more importantly, everyone ended up feeling good about it: the restaurant supply was pleased that I respected their opinion enough to come in & ask for a recommendation (I bought a few things, too), the fabricator was pleased to get a residential recommendation from a respected source & I was pleased all around.

One piece of wisdom I would like to add for those who are building a house, completely gutting a first floor, or adding an addition... Design the entire area together as one piece. Don't wait too long to plan the Kitchen...including the layout. (Door styles, etc. can wait 'til later, layout cannot.) You really should be planning the entire first floor (or addition) at once along with the Kitchen layout so you won't end up w/a Kitchen area that's difficult to make work properly. I've seen so many people who are building, etc. who just draw in a quick area and say, "that'll be the kitchen...details later." Then, when later comes, it's difficult to fit the kitchen they want in the space they've allocated for it. We've seen many posts where people say...our kitchen will be here w/these dimensions...but what I want won't fit, so how do I make it work??? (Or they go into denial and say, "It will be OK with these narrow aisles or dysfunctional layout.") They usually tell us they've either finalized all windows/doors/walls or that they've already installed/built those windows/doors/walls so nothing can be changed...and then want us to come up with some "miracle" layout that will still allow them to have what they want. The placement of those windows/doors/walls is important to all rooms, but especially the Kitchen, so do it all together. People forget that in many respects, the Kitchen is the most important room in the house. So don't treat it like it's the least important by putting it off until later & "making do" with what you're stuck with! Plan it up-front! (If we ever build again, the Kitchen layout will be one of the first things planned...not the last!)

I think you will probably get several different opinions on this issue, so I will just tell you mine right up front. I don't think anything beats a good custom cabinet shop if it within reach. There is nothing like being able to see, touch, checkout exactly what you are getting. I would never order cabs long distance if I couldn't see them 1st. There just is so much left to chance when you order and the cab maker is not on site. I appreciated having my can maker coming to the site to do all measuring, fitting, etc. I also have heard so many sad stories here of cabs arriving with major issues. Now, obviously that can happen with all custom but if the cab guy is local it is a lot easier to deal with. There are many things that make a quality cab. Some things we looked for: all wood ( not veneered) boxes, full extension drawers, good quality hardware, quality workmanship. I would definitely get references and as many as you feasibly can. Ask about quality, finish, problem solving, timeliness (were they finished on schedule)? You can never have too much information.

Yardtractor1: The classen slit seeder did an awesome job. Yes, there was a very visible corn row effect upon germination, however Classen recommends you slit seed at 45 degree angles, so the corn row effect is less visible. Plus, after the lawn thickens up in a couple months, you never see the corn row effect. Morpheuspa- as usual, your level of science & knowledge of analyzing soil test reports is scary, in a very good way. It never ceases to amaze me that you take a fair amount of time out of your day to help others that are in need. I will take photos of my lawn on an overcast day before I embark on this journey. I'll also take a few photos after seeding, and again during the spring and fall of next year. I will follow your plan to a "T", and I'm sure the results will be awesome. Hopefully the before & after pictures will validate the time and effort you put forth helping others. Dchall- Regarding the soil, let me put it this way: If my soil was light gray instead of brown, I'd swear it was concrete. I haven't done a screwdriver test after it has rained, however I have when it is dry. On average I could probably make it 1.5" to 2" down before I couldn't go any further. And that is no exaggeration. To make it easier to collect my soil samples, I ordered a soil test probe on ebay for $20. It is about 3' long, and has a T-Handle at the top. ***I was not able to drive it deeper than 2 inches in most places. Logan Labs recommends taking the soil sample at a depth of 6", so here was my Handy Man solution: I literally took my cordless drill with a 1" diameter drill bit and drilled 4" into the soil. Then, I cleared out all of the loose soil from that hole and then proceeded to use the soil test probe to get soil samples between 4-6" deep. I must say, for anybody else that has super compacted soil, the cordless drill trick will save you an hour, literally. The soil is usually very dry. I haven't used any magnesium products on the yard. We've been in the house for 3 years, so I'm not sure what the previous homeowner did to treat the soil. There is a possiblity that a very very small amout of salt got on a portion of the yard nearest the road (they do pretreat the roads during the winter in VA before it snows) but I seriously doubt it would have drifted 20' into my front yard.

@annie1992, this cow has been pastured. The farmer is going to grain feed it from now until the end of July. I’m told that will improve the marbelization. The buyer of the other half wants the bones to cook as marrow bones. Because I’ve never eaten nor cooked marrow bones and he has, I’m willing to let him have them. Maybe he and his wife will invite me over for dinner when they cook them! I love liver, but to be honest, I’ve never cooked it. If I find it on a menu, I’ll order it. Can you make pate out of it? I’ve made chicken liver pate. I’m pretty sure DD et fam would probably not put it in their mouths. Maybe my friend and I can split the liver. I don’t know how he feels about liver. Bumble, I wish I had a way to make your ground beef less hamburgery. Is it the flavor or is it the texture you dislike? Have you tried the trick of adding 1/4 tsp baking soda per pound of ground beef and letting it sit for 15 minutes before cooking? It is supposed to improve the browning. Maybe getting better caramelization will help you enjoy the meat better. Here is the science behind adding baking soda to ground beef. Thanks all. We have just such a hood, over a 36" range flanked by an induction module and teppanyaki grill module. Because it is 66" wide, it has 2 VentaHood liner units. The outside of the hood is stainless steel, designed by our architect & fabricated by a local sheetmetal shop. (With liner hood units, the surrounding outside could be wood or other material.) To continue the look, we also have a similar "hood" over our cleanup sink that houses down lights.

The liners come in different sizes, so I think you can work from the outside in. Your architect & appliance distributor should be able to help.

Many thanks to wa8b, antiquesilver, and gizmonike -- what a spectacular photograph! I feel calmer already, sounds as though 2 liner units and a custom hood over it all is the way to go.
