I have done a fair bit (somewhere between lots and nuts) of looking at 30" ranges of late. I've settled on the BlueStar, which doesn�t quite fit your model � standard layout has 2x22k burners, 1x15k burner, and 1 x simmer burner. You can re-arrange these for a very small up-charge; and I reckon they�ll build you a range with a different mix of burners as well. But my understanding is that the 22k burners, even on low, are not great for really low output simmering. Hence, if you really want all four burners to "go to 11," as it were (22k btu), this might not be your first choice. If it's a deal-breaker, then it is. I ruled out Viking early. First, I'm upgrading from a GE Profile that's a dozen years old or so. Moving to 4 sealed burners with a max output of 15k is not what I want � I can get more power from the new GE ranges. Second, I have concerns about reliability. I know a couple of folks personally (not just virtually) who have had problems with Viking, and CR reports a relatively high failure rate for the brand (I know that CR gets a lot of flack on this board for a variety of reasons, and I regard them as a mixed bag � OTOH, I don't think for an instant that they cook their numbers and when they report double the failure rate based on a decent sized survey sample, or "n," that's a concern for me). Wolf offers the same output, better reliability numbers from CR, and better consumer satisfaction numbers from JD Power. Thermador was a fall-back choice for me and my preference among the sealed burner options � I liked the size, shape, and elevation of the star burners, which go to about 18k btu (plenty for most applications). Plus I've cooked on one and have some friends nearby who've had good luck with theirs � tiny little samples, arbitrarily chosen, but the personal reports and hands-on exposure count for me. The CC range mentioned above may most closely fit your criteria. It's likely well worth a serious look if you can check one out in person. My own decision to focus on BlueStar has nothing to do with any particular defects with the Capital. An up-close examination of the ergonomics matters to me. I really like the way BlueStar uses the limited space of the 30" top, for one thing � a very key thing, for me personally � and the operation of the new racks in the oven seems very solid and smooth. For another, I tend to prefer models that have been out in the market � and subject to minor fixes and tweaks � for a few years. For another, I've got a colleague who has been using the 36" version of the range for 4 years or so, as well as a friend of a good friend, who grew up in the restaurant business and has several years' experience with the 30" BS (and a willingness to converse and provide very, very detailed reports). Tiny, arbitrary samples, but when systematic evidence is terrible or entirely absent, I give a fair bit of weight to face-to-face conversation with folks I know. Of course these are all reasons for me that might not apply to your search at all. And as I said at the top, the BS range in standard configuration just does not meet your criterion of having all four burners go from super low to super high. It's not an issue for me, but I understand the drive to optimize flexibility on a relatively small top, with only 4 burners (personally, I�m going to augment the range with a small, portable induction burner that can be pulled out as needed to, e.g., keep stock on simmer off to the side, or keep a back-up pot of water near boiling, but out of the way when I need that, and put away when I don�t). But this is going to be your range, and there�s no point in going to the trouble, and spending the money, if you are not going to get what you want.

I now have delivery and installation of my DCS "30 AG range AND the DCS "30 convection oven (the new one with knobs). Love, Love, Love them both! DH is over the moon as well. Have not really had a chance to cook with either much as we're still fitting the granite (blue pearl) countertops over the (Kohler) kitchen farm sink so plumbing and fixtures are not complete and I'm still camping out. But so far both of these are knock-out appliances! I'm blown away with what the convection oven can do (in terms of cooking methods) and anticipate bringing my culinary skills to a whole new level now that I have all kinds of precision at my fingertips. I'm beyond happy!

I'm not sure what you mean by "will all gas make cooking difficult". Is that something one of the sales people told you? There are things that bake better in an electric oven and things that bake better in a gas oven. Mostly meats and roasts do better in a gas oven due to higher moisture while pastry and such are easier with electric. Frankly, it's all personal preference. My wife does the baking in our house and she hated our last oven mainly because it was electric. She had always used gas until then and was more comfortable with it. She still baked some wonderful stuff but she was just frustrated by having to adjust her baking style to the oven. IMHO, given the quality of most gas ovens today, you will probably not have issues of temperature control and excessive cycling with either gas or electric. The main reason sales people tend to push dual fuel is that there is a premium in price and there has been lots of marketing around the "advantages" of dual fuel. I would suggest that you don't discount all gas unless you are dead set on getting an electric oven. Some brands, other than Wolf and Viking, to look at are Capital and Bluestar. Both offer a fully open burner range that will perform better than either Wolf or Viking IMHO. If you really want an electric oven, you should consider a range top with open burners and a separate wall oven. Now if you're really set on Wolf or Viking, I personally prefer Wolf over Viking after cooking on both. Finally, if you do look into other brands, do a search on "Culinarian" which is the new Capital open burner range. For Bluestar, just search "bluestar" and you'll get more threads then you know what to do with. For Bluestar, there have been complaints about the oven door sticking so read up on that and make up your own decision on whether their "V1" range has it fixed. Good Luck.

I'm not deeageaux, but numbers of us here have purchased NXRs. There are several long and detailed threads discussing the pros & cons of the brand. Well worth reading if you are interested. Basically, the NXRs are the least expensive pro-style range you can buy in the US. Deeageuax was initially a pretty harsh critic of the early NXR's because of suspicion that it might be cheap Chinese crapola. For the most part, I think he agress \that NXRs have been pretty fine stoves for the money. And "for the money" is the critical phrase here. I think Deeageuax will agree that the NXRs are aimed at a different market segment than the Blue Stars. Think of the Blue Star as a Dodge diesel pick-up while the NXRs are more akin to a Subaru Forester or maybe a Hyundai sedan. Maybe a little less extreme than those differences, but you get the idea. Actually, I think the NXR does compete with some pro-style ranges but the competiton is with the sealed burner premium brands like Viking and Dacor and Maybe DCS rather than open-burner ranges like Blue-Star and AR. Again, I invite you to read the long threads (some going back to 2009) which are pretty informative. I've been happy with my NXR for the year and half since I got mine from Costco, but it does have some limitations that may or may not matter to you. Basic differences between the NXR and Blue Star --- other than price --- different tops (cast-iron on the Blue Star but plain stainless steel on the NXR), differnt burners (BS with potentially higher-powered open-star pattern burners, NXR with "dual stacked" sealed burners) and oven size (Blue Star has one of the larger oven capacities available in a 30" range -- can fit a full size 16x26 sheet pan) while the NXR is more akin to the ovens in Electrolux ranges. Also, Blue Star has something of a fanboy cult following which the NXR lacks. (But, come to think of it, I don't think I've run across fanboy cults for Hyundai's either. That may be an advantage to being a bit down-market.) Actually, for me, with a $2k stove budget, the competitors for the NXR were induction ranges and GE Profile gas ranges. Except for not having a self-cleaning oven, I like my NXR more than its predecessor, a GE Profile dual fuel. While most reviews of the NXR have been very postive --- kind of a Subaru/sensible shoes crowd --- there have been some complaints. Most of the complaints about the NXR seem --- so far --- to be the result of shipping damage and uneven warranty service. Experiences have ranged from just fine to abysmal. Read bmorpanic's woeful saga of trying to get the company to fix or replace an obvious case of shipping damage -- a tale bad enough that recently got her stove bought back and is getting a Dacor. There are plenty of us who haven't had such problems, but caution tells me that I would buy a small brand stove only from a vendor like Coscto who has an absolute satisfaction, full money-back guarantee. I do not mean to suggest that Blue Star has been immune from these kinds of warranty problems. Do a search and you'll find that there are some postings here from very unhappy owners,
