Comments (9)Another issue to consider -- smoke and heat from an oven in a range will be sucked out by your range hood. With a rangetop and separate wall ovens you need to think about the proximity of your wall ovens to your ventilation. We have a rangetop and love it but we do set off the smoke detector sometimes when using our wall ovens. Comments (6)I've had a Monogram 36" 5-burner for 3 years now and love it. I was originally smitten with Dacor's marketing and style. Then I looked at ratings and repair rates and went and looked at the units themselves. I also spent an afternoon putting my head into ovens at a show room. My conclusions -- Dacor is for the kitchen that no one actually cooks in; looks pretty but not really practical or the best use of space. Monogram cooktops and Thermador (or Kitchenaid) ovens are for those of us who actually use the appliances. The Monogram cooktop has been a gem. 4 big points -- controls are on top, where children are less likely to be able to reach and turn them; grates are cast iron -- will last forever and develop a nice "patina" with use; BTUs are more than you'll likely need (biggest challenge is getting the flame low enough); and stainless steel sealed burner units are the only way to go. Large 5th burner is great for oversized pots. I find that Monogram's "medium" setting is more than hot enough for most cooking that I do, and after an initial browning, I'm often more near "low" or "simmer" - so there is more than enough BTUs. Dacor ovens are very small on the inside. Thermador and Kitchenaid will give you the most interior space and have a covered heating unit (cal rod). Much easier to keep clean and avoid burning yourself. I've had the Thermadors for 3 years (double 30" ovens) and can cook amazing amounts for holidays and parties. Comments (12)Practigal, Thanks for the nudge that direction; I am very seriously considering induction, but I keep going back to wishing I could purchase a range, rather than a 36" cooktop and two ovens. The kicker is that one cannot purchase a range larger than 30" with induction, and I do want a little more room than 30". I understand some brands are on the verge of offering one, or offering a partial induction / partial gas on a duel fuel range larger than 30", but the options may not be available when I need it, as we are one to two months from beginning construction on a home. If _I_ were "practigal" (or perhaps just smarter or less influenced by emotion!), I would go with the induction cooktop and separate ovens for certain, as that means the fewest compromises! To be honest: I realize now that my former Lacanche had the easiest to clean top one could have, short of going with a smooth surface, as in induction. And I did not like to pan sear very often, as cleaning the range top was still a 20-30 minute job to both degrease and polish w/ SS cleaner. (I mean if you browned meat, not just sautéed veggies, and there was considerable splatter.) So if I learn from my past experience, I will go with induction no matter what (cooktop/ovens OR range), which would be entirely new for me. At least I am not in love with fire, as some cooks are.
