I would say your saleperson missed the most fundamental aspect of Wolf training. All burners will simmer for Wolf where as only the two front would give you a so-called simmer on Dacor. Also, the Wolf simmer will be lower on BTU's. I sell both and contrast the two. Dacor = more power, Wolf = more control.

I started out looking at Dacor because we put on into a house years ago and loved it. I don't think you would go wrong with one, but I picked Wolf this time. I think Davor may have a newer model since my purchase. All the Wolf burners are full range and have an extra low simmer, you just have a smaller range on the one smaller burner -- which also allows you to put a very small pan on it better than a bif one. At least when we were looking, Dacor has smaller grates on the sides and a larger one in the center. I wanted mine all the smae size. I'm thinking the burners were different sizes too and I preferred them all the same. A few have that, but Wolf was close enough, the one smaller burner made sense and the control was key -- I looked at the tight controlled flame pattern and made my choice on that.

I'd probably have been happy with any of a half dozen of them. Keep in mind that the Thermador only cycles on and off if you are on the extra low range. On a Wolf, you have to move over to the extra low ring -- past the regular portion on the knob. I wondered about that too, but honestly, I doubt I have used the extra low simmer half a dozen time in 13 months.

If you like the Wolf, I can't tell you any reason not to get one.
