darn tootin it'll work, and like smokemaster says, slow and low. i have usually smoked mine for a day, then finish off in a dehydrator. in case you didn't know, thats what chipotle is---smoked jalapenos--i put a heat shield of metal above the coals so the peppers don't get direct heat---good luck and enjoy

BBQ smoke always enhances the flavor of my toms. I try to plant the tomatoes about 1.113 feet away from the hottest part of the grill to ensure they do not burn. I constantley use tons of NITROGEN fertilizer to encourage growth and fruit set in the roasting conditions. After the flowers bloom I use a gallon of blossum set spray per plant to encourage well developed extra large tomatoes as well as a good deal of dilute bleach to sterilize the roots and protect them from fungus. Moreover, I always fing it beneficial to add copious amounts of warm(not hot)bacon grease as a fertilizer to the topsoil below the plants. The bacon grease is best apllied 30 minutes after frying to ensure a good micronutrient content for the young developing roots.For non-pork eaters chicken grease can be applied with nearly as effective results. After the fruits have set they can be encapsulated in a closed system(such as empty 2 liter bottles of pop)and allowed to grow in an "air conditioned environment". It is best to leave a small hole at the top to allow efficient entry of BBQ smoke. After about 9 months in the smoke filled "tomato green house" the greenies should be picked and placed in the freezer for 6 months. I'm happy with my Weber Summit Silver bought about 6 years ago. This model has 4 burners arranged left-to-right, by the way. Performance is good - my only gripe is that the separate side burner to the right of the grill isn't very adjustable (though I rarely need it for anything). While I could probably get choosey and find a more perfect grill, I would first look at Weber's higher-end because I'm thrilled with Weber's customer support. While performing way-overdue maintenance, I called them to order some replacement parts for items that had understandably worn out or corroded over time... They sent me replacements at no charge. No questions about warranty periods or anything like that. I called them intending to purchase parts, but it seemed they volunteered to replace them on the assumption that Weber products are designed to last forever. So I'm a loyal customer of Weber's. We live not far from the pacific ocean, the grill is outside, uncovered and facing the sea, and we use it 2-3 times a week year-round. No complaints.

There are fire codes that will need to be satisfied to do this safely. Even cabinets under roof in an exterior situation need to be built of weather resistant materials. That generally means stainless, or marine grade products. Ventilation needs are more extreme than in a house because there's a LOT more smoke that doesn't drift away in the open breeze when captured by a roof. That translates to more expensive. It can be done of course, but you're basically doing a complete second kitchen in more expensive materials. I'm working on a 10Kft2 house right now that has put their outdoor kitchen on the back burner because of the added expense. It was 20K, just to do something basic in materials that would last the weather. Yeah, that included a sink and a fridge, but you might subtract 6K from that 20 for that. Plus subtract a heck of a lot of convenience. If you're going to create an outdoor kitchen, it needs to have all of the parts that make it work well. Otherwise, just do a plain screened porch with the grill outside the porch and traipse in and out of the kitchen to cook there. It's still what millions do every summer! 2000 CFM of smoke mitigation! At least there's no need for makeup air outside. :) But, it's not even made from 304 steel. And the steel is thin. It only weights 107 pounds. And the motors are Chinese. As is everything.
