Need a single gas wall oven with convection and self cleaning

Can anyone on this board recommend a single gas wall oven that has self cleaning and true convection? I know there may not be many choices. Of course, it would also be helpful to know which ones to avoid. I would prefer a 30 inch model. I am willing to spend more to get something reliable, well designed and that has a good broiler, but a lot of the extra electronic settings have no appeal. This is an apartment kitchen that will not be vented to the outside.

30" Gas wall ovens are rare. I just went to the AJ Madison website and found that American, Bluestar, Jenn-Air and Viking make one. Only the Jenn-Air is self-cleaning, but it doesn't have convection. The other three have convection but are manual clean. IMHO, I would choose the convection over the self-clean. Often the temps during the self-clean are so high, they mess with the oven's electronics. Also, Viking doesn't have a good reputation for reliability. That leaves American, Bluestar and Jenn-Air, with the Jenn-Air being a third the price of the other two.

I switched my plan from a cooktop (would have been Wolf) to the Capital Cularian rangetop. My ex-GC has a Wolf cooktop in his kitchen. I'm not sure if his wife cooks a lot, but I know she does some. Their cooktop didn't look scratched to me. I didn't get to examine really close up though. Your last post said rangetop. If you're thinking of going in that direction, I can tell you that member Rhome410 has a 48" Wolf. She loves it, but says it scratches. She cooks a tremendous amount everyday. Rhome had the GE Monogram ovens, but had a terrible time with them not holding a steady temperature--bad engineering. She eventually got GE to take them back. Her story makes me very leery of their ovens. I don't have a high-end appliance store in my area so I know how it feels to take a day trip to look at appliances! In the old days --- uh-oh, there's the chronic old fart warning klaxon -- we used to heat the oven to warm (about 200F), shut it off, put in a bowl with a cup of ammonia, and leave it sit over-night. Then, toss the ammonia down the sink, and scrub the walls etc. with a scrubby and dish detergent. There were commercial (i.e., restaurant and institutional grade) oven cleaners but they were incredibly caustic and a big problem for anything that was not stainless steel. (Old fashioned Lutefisk might have smelled worse, but it was a pretty close call!) The instructions for my NXR say not to use "commerciaL" oven cleaners and I'm pretty sure (and have been told) that this means the actual "commercial" products not the residential grade stuff like Fume-free Easy Off, I've used the latter several times with no apparent ill effects (basically after the massive cooking marathons of Thanksgiving and Christmas). "No ill effects" means that I have not stripped the shine off the oven lining. As I understand it it, the warnings about not using "commercial" oven cleaners refer to the restaurant/insitutional grade products, not the "residential" products like Easy Off. (Do be aware, however, that some Easy-Off products are pretty d@*& strong. So, during your stove's warranty period, you want to use the "gentler" stuff like Fume Free rather than the Extra-Strength. What I do most of the time is a modified version of what Whirlpool calls "Acqua-lift."Basically, I get the oven very hot and let a bunch of water vapor in. (Typically, by putting a CI pan of water in the bottom of the oven when I'm baking bread.) Once the oven walls have cooled past the too-hot-to-touch stage, I scrub the walls using Dawn and blue scrubbie. That usually takes care of the problem. I have the regular Electrolux single 30 inch oven and I love it. I lived through buying $10,000 in appliances (range and oven) and both were lemons, so I was very gun shy. The good thing is with Electrolux or KA, you can buy them where you have a 2 week return policy. After my previous experience, this was very important for my peace of mind. I also put it on a credit card. You also have to keep all the packaging to return it though. Ask and get it in writing before you buy. I would try to look at live models if possible. It may make a difference to you how the lights are configured and whether they stay on during baking. Some people did not like the fact that you cannot use the roller rack on the bottom slot on the Electrolux, when roasting a turkey. You can use the regular rack there. It did not matter to me because I didn't need to get every inch out of my oven on Thanksgiving as in previous years. I have used the self clean and no problems. Others did not like that the door is open on the top and dust can get in. I'm not sure if and when this would be a concern. I have had it since July 1 and there are few grains of dust in the door. I think most oven doors have some type of opening in the door. Pros: Many different cycles so you can set temp all the way down to 85 degrees. Very handy for drying gum paste decorations and other craft work as the convection fan runs! Very easy to get rolling racks out for cleaning. Very fast preheat 0-350 in under 10 minutes. I was missing my small Gemini oven but this is just as quick. Quick to change temperature. The wave touch is easy to use. Just barely touch it. I like the little diagram that lights up and tells you what element is on and if the fan is on. It has very pleasant bells that chime. It keeps very close to the set temperature, except the convection roast runs about 50-60 degrees hot.(my only con) I just adjust down a little. No one oven is the "end all". They all have features that appeal to all kinds of cooks.

I just received my double convection 30 inch wave touch Electrolux! It's in the garage and obviously hasn't been installed so I haven't used it yet. I did go everywhere I could, Fegusons, Pacific Sales, Renwes, etc. etc. etc. and looked at all of the ovens, pulled out the shelves, examined the controls, discussed the merits of each with the sales people and after having dozens to choose from; I choose this one. I've heard great things about them from friends that have Electrolux appliances, but mostly I loved the easy gliding shelves. There's more of the gliders than in the other ovens I saw, I love that the light comes on dim and then ramps up. I love the shade of blue in the interior and I really like that the controls disappear until you touch them. Several of the places I visited used this oven in their kitchen for employees so I saw them live. They all seemed to think it was a great oven so that helped me with my decision. Who knew choosing an oven could be such a big and expensive decision???? Good luck with your choice.

If you went to electric, you would have more choices. If you can't use electric, and need gas, if you went to a gas range, you'd have many more choices. Ranges are more popular because all you need is a single gas connector and you have cooktop and oven in one.

Actually, I cant use electric. So I have a choice of a wall oven and a cooktop, or a range. I have always had a wall oven and cooktop but am wondering if a range is better. I am not so concerned with the price difference as I am with which will be a better option. I wondered if it is less comfortable to cook on a cooktop while standing in front of a hot oven. I dont particularly like oven cabinets which seem like a waste of space and money, but think that maybe (?) the is a preferred solution. Biggest problem is the lack of wall oven alternatives.

Having a range vs. a cooktop and wall oven is merely a matter of preference. Some people like a wall oven because it can be mounted higher than the oven in a range but functionally they're equivalent. Oven ranges are generally insulated so you shouldn't have a problem using the cooktop with the oven underneath (some people acutally mount wall ovens underneath their cooktop). I'm acutally surprised that you can't go with an electric wall oven - is the issue needing to have electrical work done? Generally most people don't have an extra gas feed for a gas wall oven. In any case, going with an all gas range will give you lots of options.

Thanks so much. I live in an apartment building and the cost of bringing up the required electricity - if they let me - would be prohibitive and would be a huge amount of work. Thus, I need to stay with gas. The only wall oven I could use would be the Viking - dont want the Jenn Aire and the others have French doors which I cannot use because the oven is next to a wall. So, it is either take a chance on the Viking wall oven and find a cooktop, or find a range. If I get a range, I definitely want self clean because I will never get down there to clean it! The only cook features that are really important to me are convection, broil and simmer.

All suggestions welcome!
