I have never missed double ovens. I love my combi oven, and encourage you to get it, assuming you cook and are adventurous with something new! I only use my other oven about 6-10 times/year, seriously. The space in my Gagg combi is enough to cook any meats, gratins, egg dishes, brownies, cookies, pies, cakes, etc. Because it heats up so quickly, I hardly ever use my large oven (except for big gatherings and holiday baking). I wanted to pair mine with a wall oven (I also had a history of double 30" wall ovens), but at the time there was not a 30" wall oven that looked good stacked with it, so I opted for a range and combi is alone in the wall. I am having the 24 inch deep tall cabinet (existing, to be modified for the new ovens) pulled out 5 inches from the wall to match the 29 inch deep run of cabinets that I am considering having custom made for that wal. That should allow plenty of space behind that cabinet. Which leads me to another question for gizmonike. Does the supply and plumbing run in the back of your cabinets? My potential cabinetmaker said he would make deeper drawers to go with the deeper cabinets, but perhaps I should just use 24 inch cabinets and pull them out to leave a 5 inch space behind for plumbing between the steam oven and the sink? How much depth is needed for the plumbing? I believe that there is probably 2.5 inches between the back of the drawers and the back of the cabinets; is this enough for the plumbing to run inside the cabinets?

Have you seen the long running threads about the Cuisinart on eGullett? Part 1 (Dec. 2013 to Oct. 2015) Part 2 (Oct. 2015 to now) Near as I can tell, there is a negligible difference in actual capacity between the original CSO300 and the new "N" model. The "300N" has a redesigned (removable) water reservoir for the steam function (removable to make it easier to clean). Also, the "300N" offers the convenience of a specific setting for "steam clean" (as opposed to running a steam cycle in an empty oven on the plain "300" model.) Seems to me the older reviews will be equally applicable to the newer "N" model. I have a smaller kitchen but have been tempted by the optional steam oven functions of the 300N. Tempted mostly because Costco.com carries it. Same price (and free shipping) as Amazon. The attraction being the Costco absolute satisfaction guaranty --- if you don't like it, return it for a full refund at your local Costco. Re your question about getting both the BSO and CSO: I see no reason for that. My take is that the tradeoff between the models is that the Breville SO has more capacity (i.e. will fit a standard ¼ sheet pan) while the CSO offers the option of steam oven functions (but still functions with the regular small oven functions you get with the Breville.) My hesitation has been that the capacity of the CSO (which I saw at BB&B) seemed a bit smaller than I wanted. Very much a YMMV thing, though, as indicated by the enthusiasm in the eGullet threads.

If you type “Combi Steam Speed no other oven” in the search box in Discussions/Appliances you will get many threads on this topic. The down side I would see is not all of your larger pans such as half sheet/cookie/large roasters/pizza stones/etc may fit in either oven. In the case of miele the speed and combi steam ovens max out at 435 degrees and the broiler is not as strong as a full size oven. It could also be an issue down the road for resell as the cabinets would need significant rework to incorporate a traditional 30” oven. That may or may not be an issue for you. The cleaning aspect is another consideration as self clean may not be an option. (I use self clean on my miele Convection oven - 5+ years and no problems). I was fortunate to be able to include a 30” wall/combi steam/speed (all Miele) in my kitchen. If I had a choice I would have nixed the speed and found a place to house an inexpensive microwave hidden either in a cabinet or my walk in pantry (I still have my old toaster oven there and use it occasionally). Since I have a combi steam and induction - I rarely I use my micro.
