mold on suet

The last two suet cakes that I have had out have developed what might be mold, not fuzzy cheese type mold, but grey dirty mold with a hint of red. The cakes had been out about a week, which doesn't seem like a particularly long time in the late fall - zone 7. I have never noticed the development of mold before, and I'm wondering if mold on suet is possible and/or dangerous ? These are commercially made suet cakes; one was a peanut suet cake and the other non peanut - both have insects added. I removed the old cakes, disinfected the suet holders, and replaced with fresh, but I am curious if my old thinking that the suet cakes would last basically until they were completely consumed was faulty. I am very careful with the seed and nectar feeders, but have been less so with the suet feeeders.
