Heat Tolerant Question #2 (Curiosity)

Why is it that older, mature tomatoes struggle (and die) in crippling Texas heat, but young tender seedlings do just dandy?

First week of july I planted seeds for my fall crop. By the 2nd week of July they were outside. They weathered the crippling July heat (110+) like champs while most of the adults limped along and eventually got mulched. I was pretty sure my seedlings would die instantly the first 110+ day, but I ended up having to give away about 25 of them because they all survived....

Now that they're older the cool-weather varities are flailing about in our lingering heat, while 2 more heat-tolerant (so I'm told) ones are fine. But when they were seedlings, they were all equally okay?
