fried green tomatoes

For those of you from the South: I love fried green tomatoes and would love your recipes for making them. I usually use a mix of white corn meal and flour, salt and pepper. Dip the tomatoes in, and shake off the excess. Fry them up in some vegetable oil. I don't usually serve them with any sauce or condiment, but if you have a suggestion, I would love that as well.

Oh, and is there a right time to pick the tomatoes? I have some that are just turning the slightest bit pink now. Would these taste better than the really green ones?
