It is hard to diagnose a worm bin over the internet, but you did make 3 mistakes. I can't say whether those mistakes are your problem, or if you made others that we don't know about.

1) Don't put soil in your worm bun. Some people suggest a small amount, like a small handful, but others say it isn't necessary. Composting worms don't live in soil. They live in decomposing organic matter. Everything else in your bin sounds good, but it may have been too much food to start with. If the manure was aged, the worms should have gone bonkers over it.

2) Earthworms are the wrong kind of worms for a worm bin. Earthworms don't like to live in the same conditions that composting worms do.

3) You are turning the bedding too often. Besides the normal turning that comes with feeding your worms, I turn my bins only once every three months or so, and that is only to get the compacted bedding on the bottom of the bin up to the top so it will break down.

If the bin smells earthy, you probably have the moisture and C:N ratio about right. If you have too much nitrogen, and you are turning the bedding every week, the bin could be heating up.

Thanks for the input. I will sift my bin and toss the earthworms into my compost pile and remake another bin just for the red wigglers.

Was the manure old? My favorite way of killing worms is getting the bin too hot (sigh). Make sure you use aged manure and if you're putting carbs or beans in, it's better to set them aside in another container for a time to go through their hot phase before putting it in with the worms. After the hot phase, worms LOVE carbs and manure.
