growing tomatoes to make sauce....need suggestions

HI, i love making homemade tomato sauce for Sunday family dinners. Since I have a small garden (expanding this year) i usually grew larger beefsteak types and bought the canned Redpak for sauce making. But i've been reading about how the inner white liner of the canned tomatoes is very harmful with chemicals that leach out. That being said, i wanted to plan on growing my own tomatoes to make sauce. So there are a few things i need help with. I usually use 2 cans whole tomatoes i run thru the blender and 1 can puree. So what types of tomatoes would i grow to copy this? And how do i prepare them once they are harvested? Is it as easy as throwing tomatoes in the blender and then cooking them? Or are there other steps I need to take (i'm really not experienced at this and appreciate your help).

And which tomatoes should I grow for this, the paste/plum types like opalka and san marzano? Any other suggestions?
