Having tacos tonight so gotta make a small batch of my fire roasted salsa.

Everything came from the garden but the onion, Mexican oregano and garlic(not in pic).

Maters
Anaheims
Jalapenos
White onion
Garlic
Mexican oregano
Cilantro
Chiles de Arboles and Guajillos(dried from last year)
Lime
Salt and pepper to taste

Everything get fire roasted or toasted except for the herbs,lime, and seasoning.

ok Kevin, so why aren't you growing onions and oregano? Although, I think onions are a lot of work when they don't really taste any different than store bought (I got a bunch drying in the garage right now). and, oregano is extremely invasive, but if you put it in a pot, it should stay contained.

Here's a recipe I copied from a Cook's Illustrated "Healthy" Cooking magazine. It's really not bad, and I'd load it up with a bunch of steamed vegetables, probably some broccoli, red peppers, maybe peas or peapods, some mushrooms. Use whatever you like and that sounds good, the vegetables will add lots of bulk and few calories to the final dish. The notes included in the recipe are not mine, they were included in the original recipe. Low-Fat Fettuccine Alfredo Most standard recipes for Fettuccine Alfredo call for copious amounts of cream, butter and cheese. We wondered if a slimmed-down version of this decadent dish would be worth attempting and, most importantly, worth eating. Much to our excitement, we found we could cut three-quarters of the fat from our original recipe and still produce an Alfredo big on creamy, rich flavor and texture. Here are some of the ways we did it. Test Kitchen Discoveries Instead of heavy cream, we used a combination of whole milk and half-and-half to create a reduced-fat sauce that was both creamy and rich-tasting. To replicate the thickening effect of heavy cream, we settled on a roux made with just 1 tablespoon of unsalted butter and 2 teaspoons of flour. This combination thickened our sauce effectively. By adding just a pinch of nutmeg and a lot of fresh-ground pepper, we were able to give our sauce a robust savory flavor. Simmering a crushed garlic clove in the sauce added an even deeper level of flavor. Traditional fettuccine alfredo has 580 calories, 43 grams of fat, and 27 grams of saturated fat per main-course serving. Our Low-Fat Fettuccine Alfredo has 320 calories, 12 grams of fat, and 6 grams of saturated fat per main-course serving. 1 tbls unsalted butter 2 tsp all purpose flour 3/4 cup whole milk 1/4 cup half and half 1 garlic clove, peeled and lightly crushed Salt and pepper Pinch nutmeg 1 cup grated parmesan 1 9 oz. package fresh fettuccine Cook pasta in 4 quarts water Heat butter over medium heat in large saucepan until foaming. Whisk in flour until mixture is smooth and golden, 1 to 2 minutes. Wisk in milk, half and half, garlic, 1/2 tsp salt, 1/2 tsp pepper, and nutmeg and bring to simmer. Reduce heat to medium low and simmer until sauce is slightly thickened, 1 to 2 minutes. Discard garlic, stir in parmesan and remove from heat. Add 1/3 cup pasta water and cooked past; toss until evenly coated. Cook until sauce has thickened slightly, about 1 minute. Add more cooking water as needed to thin sauce to proper consistency and adjust seasoning. Serve immediately in warmed bowls. Annie

I agree - can't imagine who comes up with these ideas. I still haven't recovered from seeing roast chicken flavoured potato chips in Canada. And while I admit to being fond of Heinz ketchup - added daintily to side of plate - the thought of a ketchup potato chip turns me off. I agree with lilliepad - a good, made at home french fry (with ketchup) - my feeling is that if I am going to eat it, it had better be the real thing. I have a problem with cheese since I can remember when "old" cheddar had to be 7 years old - not artificially aged for 9 months. Unfortunately these days many people do not know what cheese tasted like back in the day (I am 60) and small cheese makers are being forced out of business because people won't wait for their product to mature. I don't like Cheez Whiz - never did, but I think that in the 1950s it might have actually contained some cheese. My husband used to like Velveeta - not any more. But I wish he would leave my cheese alone! I am also tired of beef that tastes as if has been boiled - when it hasn't.

It's Cinco de Mayo so we're having Mexican. Right now I'm making Jae TN's wet burritos. Man, those are so easy! Also having an avocado/cucumber/tomato salad with cilantro and lime dressing. Bet those rib sandwiches would be yummy. Let us know what you decide. I've never made taquitos but have wondered how the hold them together while they fry. Twist ties? LOL!

LOL! Sushipup, that's the thing. There are some northern places in Mexico where there just aren't corn tortillas. I wouldn't put al pastor in wheat. Fish tacos, which really are a Baja thing, as well as San Diego, are another story. And fry bread tacos are amazing! Writersblock, from what I can ascertain, the al pastor story about the shwarma is as real as any origin story from the first half of the 20th C. can be. For instance, it's well known that the French Dip and Chili Size started in Los Angeles, but there are conflicting stories about who was the first, and how it happened. Nachos, however, only have the one story about the shopping ladies coming into the restaurant between service times, when the kitchen was mostly shut down, and Ignacio (i.e., Nacho) who was serving them throwing together some bits and pieces to make them something to eat. The actual name of the maitre d' in Tijuana, Cesar something, for whom the Caesar salad is named, is known. I don't remember his full name, nor if he invented it or if it was just named for him within the restaurant, but that's a known fact that can be looked up easily. The story behind al pastor, from many unrelated sources, with sufficient drift to be pretty sure that they aren't recently from the same origin, is that there was an influx of Middle Eastern immigrants to Mexico City in the 1920's or '30's. They made schwarma. The vertical spit was embraced and adapted by their native Mexican neighbors. I suspect that it was originally lamb on the spit. That would be more consistent with what people from the Middle East would have eaten and would have spit roasted, and would make the name "by the shepherd" make sense. Easy for the Mexicans to substitute pork for lamb and add their own kinds of marinades. Note: I think everyone agrees, now, that "chili size" came from Ptomaine Tommy's and that it referred to the size of the ladle, but a number of years ago there were a bunch of other stories floating around. At that time, there was an article published, which seems to have been seminal in settling the dispute, but at the time it was printed, I thought they'd gotten the meaning wrong, saying it had come from the smaller scoop. A chili size, as I knew it from childhood in SoCal, was not a chili burger. It was a burger, with or without a bun on the bottom, smothered in a dish of chili. Thus, the original call would have been "chili size" for the bowl of chili sized ladle of chili on what, in the beginning, might have been a proper burger that the patron wanted overflowing with lots of chili, and "hamburger size" for the amount normally put on a chili burger. That's a much simpler derivation that fits the evidence better, but I couldn't tell you for sure. Ptomaine Tommy's closed well before I was born!

Hit the nail on the head Stoney!

Pam: I grow onions. But this past crop were all small. I think it's because I took a chance by planting them in a pretty shady spot last October and they just never got good growth as the sun got even worse as winter approached. Live and learn. It's always a quandary with them. I'm supposed to get them in the ground in Sept/Oct, but my good spaces are always being taken up with my summer veggies still.

Oregano, well.. I like the Mexican stuff for one. Two, I hate starting a lot of herbs from seed because they take so damn long. So, if I have my choice, I buy starts. Which leads me to three-- I haven't found a start for the Mexican oregano anywhere. And 4.. I get a bag like that in the pic for 3 bucks.

I grow SOME herbs... Rosemary, French Thyme, Cilantro, Parsley, and sometimes Basil. If I had more space, I'd have a ton going all the time. That reminds me... my potted Thyme took a crap. need to pick up another one.

FYI, Mexican Oregano is easy to grow 'cause it likes abuse. It also flowers continually. Great bee and humming bird attractant.
I buy the bagged stuff too, 'cause it's cheap and easier than pickin' the damn leaves off... ;-)

No picture of the final product, Kevin ?

I like salsa (maters + Japs, + other pepps + cilantro + Onions + fresh cucumbers, Salt, lime juice, olive oil. ). That is a cool summer version.

HERBS: I grow the annuals (basil, dill, cilantro) and parsley from seeds, by direct sowing. Rosemary is grown like shrubs everywhere around here and I am not a big fan it. Oregano , sage and thyme, are my must have herbs. I get them as plants :Greek oregano and German Thyme. They are a must on pasta dishes for me. Another favorite herb of mine is summer savory. It can be substituted for thyme/oregano or used along with them.

Do your summer veges peter out in the fall/winter, Kevin? if so, plant the onions mixed in with them. This year I ran out of room for my peppers, so I planted them mixed in with my onions. I just pulled my onions a few days ago and the pepper plants are doing great. seems like it was a good combo.

My sage took a hard hit from the winter we had a couple of years ago. It's still alive, but it's barely holding on.

Those Georgia Sweet onion sets at HD are fast growing and super good!
Put some on pizza, spaghetti, hot dogs.
Little smaller than a baseball but good!

I'll try a larger variety next season.

Pam: Not unless that damn Tomato Suck Bug takes them out. Funny that you mention planting amongst them. If I get enough annuums early, I might just pull them and put the onion there this year. I won't ever grow the WHITE ones though. I just don't use them enough. I like the stronger Brown(yellow) and Red ones a lot.

Stoney: the reason I don't do sets is size. Yes, mine came out small. But that was MY fault due to my planting them in too much shade.
