What's for dinner May 5th?

Did shredded beef tacos last night. May make beef taquitos with leftover stuff tonight, if I can figure out how to seal them so they don't fall apart in the deep fryer.

Also have some leftover boneless pork ribs I could slice or chop and morph into something else ... hmmmmm

Chip up those ribs and put on buns! Yumm.
We are having a pork roast that I put pork rub on. Fried potatoes, going to make coleslaw and Patti's dill rolls with it.
Hope its good. Then will chunk up the leftover pork and make pulled pork sandwiches sorta with BBQ sauce tomorrow for lunch. We always have leftovers for lunch.

angelaid..use a tooth pick...are you doing flour or corn tortillas?

if corn, nuke to semi-soft. fill and roll..let dry slightly they should stick together...

Congrats to those that are done already! Wow! You guys are fast! perennialfan273 - I'm glad your mom is not in pain right now. Yah, I've heard, too, that sometimes there are numerous surgeries when it comes to the back. I'm praying this is the only one she needs as well. (((HUGS))) Thanks for the update. Aloha folks, I did it!! :) I was able to package up 1 or 2 seed packets for every participant. :) Amazing! Also wishing you a Happy Holiday! well I finished up packing at 5:34am this morning..lol I pulled an all-nighter but I managed to get it done. so Sue you're not the only one! Oh my. You really stuck to it! I quit at 1 AM because I didn't want to be tired today and maybe even tomorrow and maybe be grumpy around a lot of folks. I had 'thought' I would do more this AM, but my AADD got in the way. I may send a few extra things out Fri, and if they throw a kink into the sorting they can just be kept to be passed on as bonuses sometime later. Whew...glad to be over the seeds for a day or so. Sue

We are having camo day tomorrow at school.. I just finished camo nails in pinks. I found pink camo cupcake papers...which led to....Pink Camo Cupcakes.. I made the batter into 2 shades of pink plus the vanilla batter. Blobbed in the three batters. The frosting was done in pink, tan and plain...swirled all three together..looks like Neopalatin though lol... I will take a photo tomorrow.

It's Cinco de Mayo so we're having Mexican. Right now I'm making Jae TN's wet burritos. Man, those are so easy! Also having an avocado/cucumber/tomato salad with cilantro and lime dressing.

Bet those rib sandwiches would be yummy. Let us know what you decide. I've never made taquitos but have wondered how the hold them together while they fry. Twist ties? LOL!

Thanks Susan. Most of the recipes I'm looking at say to bake them in the oven seam side down. Will try one batch like that and one batch deep fried and see what happens.

Chicken stir fried with asparagus and some risotto with a salad. Darn! I forgot it was cinco de mayo!

Changed my mind on the coleslaw, store had asparagus for $2.29/lb. We will have oven roasted asparagus instead. YUM!

I was feeling kind of crappy most of the day and didn't feel like cooking.

I've got lots of cabbage soup in the freezer and we had that with some garlic bread. Time for tea and ice cream now.

I'm going to have to try those burritos that you guys are raving about!

You're very welcome, Nodakgal. Jae's burritos were a big hit here, too. And will be for many meals ahead!! We could only eat 1 each and the recipe made 10 big ones. They are freezing as we speak.
