Healthy, Low-Cal Recipes...

Got a challenge for you ;) The husband and I are trying to simultaneously lose weight and improve our vegetable intake (which thankfully go hand-in-hand if done right). So I'm looking for any dinner recipes that meet the following qualifications:

- are under 400 calories per serving

- on the lower side in regards to sodium and fat

- are heavy in vegetables as part of the main dish, or go well with certain veggies as a side

- preferably suitable with chicken or turkey (vegetarian is okay too!) We're doing pork in moderation, and avoiding red meat.

- are relatively easy to cook. I'm not a fan of being in the kitchen for more than 30 - 40 minutes

So far we've been eating a lot of stir fry, and I have a great tomato and green bean dish that goes over (a small amount of) pasta or rice. I made chili last night (and shoved as many veggies into that as I could), and we'll be having chicken tacos tomorrow night. We also start dinner with either a salad or a small cup of veggie soup. But I'm running out of ideas for dinner, so any suggestions you might have are greatly appreciated!
