Jalapeno Bacon

I need help with some info, of course. This next question may be the most important question you have ever run across. What store did everyone buy the Jalapeno Bacon in?

Above all most important what was the brand of bacon?

My answer probably won't help much because I buy mine in Texas. I get it at a store in Southlake, near D-FW Airport (my husband works at the airport), that is called Central Market. It is a sort of upscale, gourmet type market and has about 100,000 things I never see anyplace else. The brand of jalapeno bacon I buy is H-E-B. H-E-B is a chain of grocery stores in Texas that is based out of San Antonio (I think), so I assume the H-E-B brand is their own store brand. As far as I know, H-E-B doesn't own Central Market, so clearly they allow other stores to sell their jalapeno bacon.

I don't now if you'll find jalapeno bacon in a store there in your area, but if you don't, you can order it online. I've linked one source for you.

Cathi, my favorite cucumber way to eat cukes, other than pickles, is a "recipe" given to me by a much-beloved neighbor a decade or so ago. ( We loved these neighbors so much, we named kid #3 after them.) We call them "Nana's Cucumber's". Peel and slice cukes 1/4" or so and mix in about equal parts of sugar and Miracle Whip (the ONLY reason to have MW in the house, if you ask me, a full-fledged mayo fanatic), and top with a glug of vinegar. Let sit for a day or so to work its magic and then chow down! It's all so very exact, isn't it? LOL It's really just one of those things that you taste as you're going, until you find the right ratio for your tastebuds. For summer squash, our favorite is "Zuke Goop". Slice the squash, add tomatoes and corn, salting to taste. Sometimes we add onions and garlic, sometimes not. Simmer until the squash is tender and top with a sprinkle of cheese. (We came up with this recipe when we lived in Kansas and could actually grow squash without the bugs beating us to them. LOL) Diane

mboston: Barnmom told me to beat all the egg whites first. I was only beating one white in, because I didn't think it mattered but it did. My recipe is similar to yours, from a 1939 Cookbook. Made a few changes. I use it for Pancakes also. I use the Waffle Batterr thicker. I've seen them baking some, where the Batter is running out,all over the Wafflebaker. Can't do that !!! LOUÃ¯Â¿Â½S Pancakes and Waffles Recipe 2 1/2 cups milk ( IÃ¯Â¿Â½ve been using powdered milk) 2 eggs ( separated ) . 1/3 cup of Veg. Oil 2 tablespoon of Vanilla Pinch of salt 1/2 cup Sugar 1 cup of Wheat Flour 4 teaspoons Baking Powder All Purpose flour ? --------------------------------------------------------------------- I beat the egg whites first , so I donÃ¯Â¿Â½t have to clean the beaters. Beat the egg whites with a teaspoon of sugar, until peaked. Put aside until the batter is mixed ****************************** Batter for Pancakes: Put the first 6 ingredients ( except egg whites ) in a mixing bowl and beat until smooth. Put in the Wheat flour, Baking Powder. and some All Purpose flour. Beat until smooth. Add enough AP flour to thicken slightly, (were it leaves ripples while mixing ) not thin and loose. Add 1/2 the beaten egg whites, at a time , to the batter and fold in easy. *********************************************************** For Waffles: Thicken more, to where you have to move it around with a spoon, when it is put on the Waffle Baker. Then do the egg white thing as in the pancake batter. When baked I cool them fast on a rack and put them in a plastic bag,, separated and right in the freezer. If you overcook a little, dampen slightly with water, before you put them in the toaster oven. I have a very old round Waffle Baker with adjustable heat Range. I use mine on high range. It makes a Waffle about 1/2 inch + thickness. For me this is just right, for the amount of butter and syrup that you can put on top. I found a Cuisinart mod.WMR-CA to match my old one. Now I can make Waffles in Stereo . I donÃ¯Â¿Â½t use the Belgium Waffle Maker, any more, because itÃ¯Â¿Â½s too much Waffle for the amount of syrup and butter. But may be good for you.! If I want a Belgium Waffle, I just make a double decker and put fruit or whatever filling in between. Then you have more cooked surface area , on the Waffles. Which is where the flavor is ( the cooked surface )

Oh great, Robo! Cream cheese is definitely the standard so I am sure yours were great! Localeater, I think horseradish is perfect-- and the chives and parsley are a great addition too. We have red peppers, scallions and parsley so I may just garnish with scallions instead of chives. It will save another grocery trip! I am so happy with how it pulled together. We wanted to do a more special meal... none of the catered meals felt right. We thought about a tenderloin or surf and turf but as we pulled the book together, we realized how so many of the memories and lessons around dad center on food. He is the cook.. the griller.. and he's at the center of all our family food traditions. I had planned to use cards to identify the foods with memories or stories but everyone who has seen the menu has commented on how every single thing reminds them of dad. No need for cards to tell the association! He'll see himself in every morsel... plus many of them tie to "lessons" in the book. Little things.. like "grandpa taught me that coke tastes so much better from a glass bottle" "dad taught me to keep a salt shaker in the garden for the spring onions" and some with bigger meaning like the spicy shrimp he taught my learning disabled nephew to make. I can't wait! Thank you all!

I know we talked about it in a previous thread but I don't remember which one. This week, I used Jalapeno Bacon to add flavor to a mess of black-eyed peas. It was SO good.

There's not much better than bacon or jalapenos to start with, so if you combine them, WOW.

I'm glad you remembered the previous discussion because I'd thought about it and thought about it but couldn't remember where we had been discussing bacon.

Now don't start throwing things at me, but I am afraid the Jalapeno Bacon is not quite perfect.....yet. Maybe I just need to try another brand. To me, it tastes really, really, really salty and that leads me to believe they may be infusing the bacon with jalapeno flavor by using a jalapeno/salt seasoning blend.

In the blackeyed peas, the jalapeno bacon was perfect (and I didn't have to salt the peas because the bacon salted them for me). On Jalapeno poppers, it was just too salty. I haven't tried it yet on BLTs....might do that today or tomorrow.

So, I'm thinking that while the idea of jalapeno bacon is a great one, maybe the particular brand I purchased isn't the "right" one. So, next time I'm shopping down in Texas, I'll check a different store for another brand. Lots of people rave about jalapeno bacon and I can't imagine all of them are eating and loving bacon as salty as the H-E-B brand that I purchased.

So, I guess the search is on for the 'perfect' jalapeno bacon. Alternately, I wonder if I could season regular bacon with powdered jalapeno peppers and get the right blend of bacon and jalapeno flavor without the extreme salt. I see some bacon experimentation in my future.

I'm not a big salt eater, so I probably would not like it too much either.

I see powdered jalapeno (or it may be jalapeno-flavored salt) and powdered chipotle (or chipotle salt) at some local stores. Seems like it wouldn't be to hard to sprinkle some bacon with a little of it and let it sit a day or so to absorb the flavor before you use the bacon. It might be fun experimenting to see if it would work.
