Great waffle recipe

Usually I am asking for a recipe but I tried this one that was in the Parade Magazine a couple weeks ago. They are wonderful - very light, tender, and have turned out beautiful both times I have made them.

Nana's Never-Fail Waffles (Busy Phillipps recipe)

2 eggs

1 cup milk

1 cup flour

1 tsp sugar

1/4 tsp salt

2 tsp baking powder

1/4 cup vegetable oil

1. Preheat waffle iron

2. Seperate eggs and whip whites until soft peaks form. (I used my mixer)

3. In a bowl blend yolks, milk, flour, sugar, salt and baking powder.(I also added 1/4 tsp vanilla)

4. Add vegetable oil, making sure not to over mix.

5. Fold in egg whites and mix well with a fork or whisk.

6. Lightly oil waffle iron. Pour in about 1/2 cup batter.

Close iron and cook according to instructions.

I know it was the beaten eggs whites that made the difference. The vanilla that I added the second time gave just a little more flavor. Hmmm.... hope you like them.
