Canning recipe for roasted red peppers?

I've just discovered roasted red peppers this year, after the swap. I bought them (whatever they had at WalMart) to make the pasta salad I fell in love with there and LOVE the taste.

I've looked through my BBB but have only found regular green peppers and roasted red pepper spread. I'm going to go search the harvest forum here in a minute but I'd love to hear if you have any recipes I could can up!

This recipe is from Ellie Topps' book, "Small Batch Preserving". It only makes four half-pints, but I see no reason why you couldn't double or triple it.

Fire-Roasted Pickled Sweet Red Peppers (makes 4 half-pints)

6 to 8 small sweet red peppers (approx. 2 lbs.)
1 large clove garlic, unpeeled
1/2 cup dry white wine
1/2 cup white vinegar
1/4 cup cider vinegar
1/2 cup coarsely chopped onion
2 T. granulated sugar
1/2 T. dried oregano leaves OR 1 T. fresh oregano leaves
1 t. pickling salt

1. Roast peppers and garlic on the barbaque grill or on a rack under the broiler until the skins are blistering and starting to blacken. Place peppers into a paper bag until cool enough to handle and set garlic aside. When peppers have cooled, remove skin, cores and seeds. Cut into lengthwise strips about 1" wide and set aside.

2. Combine wine, vinegars, onion, sugar, oregano and salt in a small stainless steel or enamel saucepan. Squeeze the roasted garlic to remove it from the skin, then mash it and add it to the saucepan. Bring the mixture in the saucepan to a boil over high heat, reduce heat and boil gently for 5 minutes.

3. Pack peppers into hot jars to within 3/4" of top rim, taking care not to pack too tightly. (You want to be sure they're not packed too tightly to allow the liquid to reach all of them.) Pour boiling vinegar mixture including onion to within 1/2" of top rim of jar. Process in a BWB for 15 minutes for half-pints.

Makes approx. 4 half-pint jars.

The following recipe is from Linda Ziedrich's book, "The Joy of Pickling, 2nd Edition".

PICKLED ROASTED PEPPERS (Yield: 3 pints)

2 & 1/4 Cups white wine vinegar or distilled white vinegar
1 T. sugar
1 T. pickling salt
3 garlic cloves
4 lbs. pimiento, bell or Anaheim peppers (red, yellow, green or a mix of colors), roasted, peeled, cored and seeded

1. Combine vinegar, sugar, and salt in a nonreactive saucepan and bring to a boil. Remove the pan from the heat.

2. Put a garlic clove into each of 3 pint mason jars. Pack the peppers loosely in the jars. Pour the hot liquid over the peppers, leaving a 1/2" headspace. Run a narrow spatula around the inside edge of each jar to release any air bubbles, and then add a little more of the liquid if needed. Close the jars with 2-pc. caps. Process the jars for 10 minutes in a BWB, or immerse them for 30 minutes in water heated to 180 to 180 degrees Fahrenheit.

3. Store the cooled jars in a cool, dry place for at least 3 weeks before eating the peppers. After opening a jar, store it in the refrigerator.

Thanks, Dawn. I'm looking for a recipe that tastes like the store-bought ones. They're not pickled, no vinegar taste at all, no onions or garlic in the jar.

That reminds me I need to stay up and pickle some chiles tonight. *yawn*

I'm going to try some of your pickled sweet peppers, too, before the season is over so I do appreciate the recipes anyway!

There is a roasted red pepper spread which is quite thick. I use this recipe and add roasted onions, and roasted garlic to it, along with balamic vinegar and even some citric acid. Its got no tomatoes, but I suppose you could add those too. Just be sure to give it at least 1 teaspooon of citric acid per quart. I also use some dried peppers that are ground up. All this gets pureed in a big blender before boiling and filling the jars. I even add some rosemary to the mix..

I did the search and it showed up in the list of hits but when I click or try to open it the column on the right and the pic of someone rolling dough and below that I get "Your search for view found did not find any results. Try searching again using different keywords" with everything else below it blank. So I tried clicking on other recipes and same thing. Then I click on the Free Recipes link directly under the logo and a search box opens, farther down you can narrow it down to recipes by category or ingredients... so I click on Tomato Recipes... it lists a bunch of them... I click on #4 "Beef & Cheese Tamale Pie" and I get that blank page again with "Your search for view found did not find any results. Try searching again using different keywords" !!! Soooo... Yum, lots of recipes to cut and paste here, thanks everybody! Here are some more. Marilyn's Ziti in Roasted Bell Pepper Sauce 8 ounces ziti pasta 2 red bell peppers; roasted (or 16 oz. jar) 1 onion; chopped 2 cloves garlic; minced 2 tablespoon olive oil 1 cup heavy cream (I think you could easily use half & half in place of the cream.) Kosher salt and fresh ground pepper 1 pound mushrooms 1 red bell pepper 1 orange or yellow bell pepper 4 green onions; sliced thin 1 cup fresh grated Parmesan Pre-heat oven to 350°. Cook ziti pasta in boiling, salted water as directed on package; drain reserving 1/2 cup pasta water. Roast the 2 red bell peppers as instructed in "Vegetables" section, remove skin and chop. Or use a 1 pound jar; drain and chop. In a medium saucepan, cook onion in 1 tablespoon olive oil until tender. Stir in roasted bell pepper and garlic for one minute. Add cream and bring to a simmer; carefully puree in a blender until smooth (vent lid to allow steam to escape). Season with salt and pepper to taste. Slice mushrooms, red and orange bell pepper (1/4-inch slices) and add to a large skillet along with 1 tablespoon olive oil and a sprinkle of salt and pepper. Cook over medium heat until peppers are soft and liquid is mostly evaporated (about 10 minutes); stirring occasionally. Immediately place peppers in a plastic bag and close tightly. Let stand at least 20 minutes to cool. Remove skin, seeds and stems. Cut into strips. Meanwhile, In a large heavy saucepan, heat olive oil; add onion, along with salt and pepper and sautÃ© until softened but not brown. Stir in garlic and cook 1 minute. Add roasted bell peppers and broth; bring to a boil then reduce heat to low and simmer 25 to 30 minutes until reduced by half. Puree in small batches in a blender. Diane, Next time you are near a Dollar Tree take a look at what they have. The size of the jar keeps getting smaller, but they are still a good buy for a buck. You might need to buy a few while you are looking for the perfect recipe. They are in jars in the location where they have fruit in jars. I'll likely just freeze most of my peppers and continue to use those roasted red ones from Dollar Tree.

I sent peppers home to Texas with my DIL this week and took some to a local friend. Today I had dinner at her house and the tomatoes and peppers (that weren't in the salad) were sitting on her counter. I started to tell her about the peppers and she said, "Oh, I know. I had one for breakfast." I thought to myself that she should be a gardener also.

She was worried that the salsa would be too hot and told everyone that it was my fault if it was too hot since I grew them. Well it wasn't too hot at all, but then I came home and tasted the Frank's Thai Hot Pepper that I got from George, and I couldn't take that heat. I was sure glad that I hadn't taken any of those over there. LOL After I tasted it, I thought 'Diane and Jay should grow this one!'

Can't say that I've ever been in a Dollar Tree. Heck, I don't even know if they have them around here. Oh, how I hate shopping of any sort! How much are they there for how large a jar? They're ridiculously expensive at WalMart, at $4-5 per jar. Can't remember the exact size but no bigger than a pint. That's what made me think of searching out a recipe: wanting some for pasta salad next week but not wanting to cough up the dough for it. LOL

There is a Dollar Tree in Poteau. It's in one of the small strips that are on Broadway across from Brad Fenton. IIRC, it's next door to a Chicken Store.

Diane, I stand corrected, it only says 'sweet red peppers' and doesn't say roasted, but they are good for cooking IMO. I like to add them to potato salad and such. It is a little over 14 oz, I think, and at Dollar Tree, everything is a dollar.

I've never had roasted red peppers from a jar, so don't know what they taste like. Sorry.

Do you remember what ingredients were on the label? Because if you do, I can keep looking for a recipe. They've got to be preserved in 'something', if not in vinegar, but I can't imagine what it would be.

You might try asking at the Harvest Forum. If they don't have a recipe for them, no one does.

Now I know that you really are out in the boonies, because even we have 4 Dollar Tree stores near us, two within easy driving distance (Ardmore, Gainesvilles) and two a bit farther (Denton, Sherman). You'd be amazed at how much wonderful stuff you can find there, mixed in with lots of junk. In fact, we have a huge Dollar Tree Distribution Center here on the western edge of Marietta, and they have been great corporate citizens, supporting all kinds of local non-profit organizations.

Diane, We don't have a Dollar Tree either although there is one in Miami and another in Joplin. I don't go to Miami much, but I usually make a trip to Sam's in Joplin about once a month and I try to remember to hit Dollar Tree. Dawn is right and they do have a lot of junk, but I buy party cups and plates, bathroom cleaner, and a lot of the fruit and peppers they sell in jars. It wouldn't work for your family, but for Al and I, one jar is about right. I'm not a pear lover, but these are good, and I use mandarin oranges on salad or eat them with cottage cheese. It is kind of some of our 'open and eat emergency food storage as well'.

I've never seen a canning recipe for them that wasn't pickled, but I've read about people roasting and freezing them with good results. I had hoped to be doing it this year, but no such luck with our spindly plants.

Thanks, all! I'll look for that Dollar Tree on my next shopping trip, thanks! I'll get a jar of those and one of the ones from WalMart so I can compare. I remember looking at the ingredient list last time I bought them but, of course, can't remember them.

Diane, as mentioned before, everything is a dollar. With your sense of humor I thought you'd appreciate the fact that I can no longer let me husband accompany me into a DT. As he places each item on the belt he asks, "how much is this?" The first time the clerk responds, "everything's a dollar." With subsequent items, the clerk gets annoyed, and seedpapa thinks he's being very funny. It is just soooo annoying.

Diane, included in the junk part of Dollar Tree is a lot of stuff aimed at kiddos. Brace yourself.

I generally steer clear of the food aisle, so thanks SGM for the heads up. I'll have to stop in and look for red peppers.

I have also purchased wonderful red peppers, imported from Italy, in Big Lots, on a catch as catch can basis. They aren't a dollar, but they are cheaper than Wal Mart. Often, they are the kind packed in oil, a method not available to us home canners. Tasty nonetheless.

Dawn, we drove by the DT distribution center last night on our way back from Houston. Once again I had seedpapa honk at you. I told him I knew you must be getting tired of all this late night and early morning honking. Hopefully, this will be the last trip to Houston for a long while, but I will be going to Dallas next week. Keep your ears out!

I ended up having to run to town yesterday afternoon to do some banking and guess what I saw just down the road from the bank? The Dollar Tree! The older kids were with me so I left them in charge of the youngers while I ran in to quickly grab the peppers.

Voila! I'm now the proud owner of 4 $1 jars of peppers. Woo hoo! I boiled up some pasta this morning and it's now cooling in the fridge. I'll whip up the rest of it this afternoon and give the peppers the ol' taste test then.

Thanks, SM. So, truly, everything in there is $1?? Cuz I saw hardback books and all sorts of things I wouldn't think would go for $1. Hmm, I may have to go back and investigate more thoroughly. As I mentioned, I absolutely hate shopping so I whisk in & out of all stores, zooming straight to whatever's on my list with no dilly-dallying, so I don't usually see much. That and I'm usually distracted by my normally well-behaved kids turning the store into something resembling a Jerry Springer show.

Diane, now that I think about it, they have a lot of stuff aimed at teachers that would be good for home schooling. Visual aids, supplies. It's not Lakshore Learning, but everything really is a dollar, even the hardback books. Exception: greeting cards are two for a dollar.

They have a lot of holiday decorations, even garden seeds, and I have seen them go very cheaply at the end of the season. I think it was 3 for a $1, then 7 for $1 when the selection got poor, but for zinias and lettuce, it will do.

One year, I needed a lot of small gifts so I bought $1 mugs at DT and filled them with several hot chocolate packs which I bought in large boxes of several varieties at WalMart, candy cans for swizzle sticks, a stirring spoon, and other related items. For my cost of a few dollars each, they had about 3 mornings of hot chocolate and a mug to keep their pencils in. Since I had about 15 to do, it worked out great, and I could even fill one with sugar-free mix so the diabetic lady didn't feel left out.

I also buy aluminum throw-away pans there so I don't have to keep up with pans when I take food somewhere. The trick is to look for the bargains, and ignore the junk.

Diane, I also have a can of ROASTED red peppers, (a gallon, but don't ask) and it also has the same ingredients as the jars, except that it has NO sugar. Of course it didn't come from DT.
