Hedgerow options?

Hello everyone; I could sure use your advice.

I'm trying to "build" a hedgerow just inside our 375' property line and am in need of ideas as to what to plant. I'm on Maryland's Eastern Shore (zone 7a) with sandy soil that is short on organic matter. We are near the Chesapeake Bay and experience breezy/windy days throughout the year, rarely any snow cover in winter, and high heat and humidity in summer. The property line is in full sun. I would like to provide food and shelter for birds (including wild turkeys, which come around from time to time!).

Since October I have planted (all are still young, none over 2.5' dia.):

Arrowwood Viburnum, species (5) and Blue Muffin (2)

Gray Dogwood (2)

Silky Dogwood (2)

Southern Bayberry/Wax Myrtle (2)

Winterberry (2 plus 1 Southern Gentleman)

Inkberry (2)

Serviceberry (1 plus 1 that was here when we got here)

Do any of you have recommendations for what else I might include? Should I include trees other than the Serviceberry?

Also, some of them seem leggy (especially the winterberry and dogwood). Should I cut them back early next spring to encourage bushiness? If so, where should they be pruned - to the ground (seems drastic), 12" from the ground, or other height?

All recommendations or other advice are welcome!
