Why didn't my seeds grow?

In early December of last year I collected about one hundred seeds from about six different Japanese Maple trees in the Arboretum here. After a hundred days in my refrigerator, only five of six seeds from one single tree (I kept notes) sprouted. All the seeds were picked from the trees and kept in an outdoor shed for a few days before soaking in hot water and placing in plastic bags for the stratification process. Was it my timing or were they suppose to be dried out first? Where did I go wrong? Should I try growing them again next winter?
