Comments (7)Here is an update of the leeks only 11 days later. I've been eating the leeks by peeling off layers at a time. I'd say I've peeled off about 5-6 layers on each leek and its still growing. I'd say they've grown about 6" in height at least. As well as having grown more actual leek stalks. When I looked inside the stalks I was surprised to find that under each stalk is another smaller baby stalk and with the baby, another stalk. This goes on into infinity. Kinda cool. You can tell the new stalks because they have pointed ends and have not been cut. Comments (2)I have done this before, and with small leeks you can regrow them twice. They are also quite winter hardy. You could probably plant it outside and it would grow. In my experience, leeks are very late to go to seed. Those that come through winter don't bloom until midsummer. For a close-to-perpetual supply of green onion tops for clipping, you should look at top-setting or Egyptian onions. Lots of green onions for very little effort....See MoreCan leeks be canned? Comments (25)Wow leeks sure are expensive. I always grow my own. Started from seed indoors and transplant out. I grow 'Lincoln' and 'Lancelot'. I thought both were very easy to grow. I started so many seeds that I gave about 50 transplants away in May. I have all the Lincoln picked but still have 2 rows of Lancelot left in the garden. With our warm autumn this year, I hope to keep them outside for 2 more weeks here in SE WI. My advise for those prices is to grow your own! They make wonderful leek & potato soup. Although cock-a-leekie soup is my absolute favorite way to use leeks. Creamed leeks are great too. Leek quiche? Sounds yummy. I suppose I should try freezing some of the crop for use in soups/stews but so far I find I can store them in the refrigerator for up to 3 weeks after picking them. Comments (27)I made the leek and broccoli soup tonight. I used a vegetable broth (Imagine No Chicken Broth)since I don't mix meat with dairy. And I zested a tangerine instead of the orange because I had tangerines. The soup was creamy, thick and I am sure it will be a wonderful comfort food in the dead of winter. It was a hit with both husband and son - Not so the filet of flounder I served as the main course. To tell you the truth, this soup should be a meal in itself, with some crusty bread and a salad. Anyway, the flounder, I rarely buy this fish but thought it would be a nice light follow-up for the leeks and broccoli. Well now I remember why I don't do flounder. It is too light, too bland and really needs a stiff breading to make anything of it. I tried a quick poaching in a too sweet tangerine juice with cilantro. What was I thinking. The whole thing went in the garbage. Ugh! I did make very nice zucchini though. Thank goodness (and Canarybird) for the soup....See More- 13 years ago
