Ground cherry yellow plum jam

My 9-year-old daughter and I made this today--had to add some yellow plums because it is a BUGGER to keep enough ripe ground cherries around to make anything, as my 3-year-old gobbles them up as fast as they fall off the plants. So I used about a mix of ground cherries and yellow plums, to equal 3 pounds.

This turned out so good that I can see myself sitting around eating it from the jar with a spoon, and I am not much of a jam eater :D

Thought I would share my improvisation with you guys :D

This was adapted from an about.com recipe.

2 pounds plums, cut into eighths, pits removed.

1 pound ground cherries, husked and cleaned.

1/2 cup water

2 tablespoons lemon juice

7-1/2 cups sugar

Pectin (I used Ball liquid).

Place plums, ground cherries, water, and lemon juice in a large stockpot. Stirring often, bring to a boil over medium-high heat. Mash the ground cherries with the spoon as you stir. Cover, reduce heat to low, and simmer 10 minutes, stirring occasionally, until fruit is soft. You should end up with about 4-1/2 cups.

Stir in sugar. Return heat to high and bring back to a rolling boil while constantly stirring. Add pectin and return to a boil while stirring. Continue to stir and boil for 1 minute, then remove from heat. Let rest for 1 minute, then skim off any foam.

Pour even amounts into sterilized jars, leaving 1/8-inch of space at the top. Wipe rims and seal with sterilized lids. Process in boiling water for 5 minutes. Remove, let cool, and label jars. Store in a cool, dry place.
