southern peas -- when do i pick 'em?

i just got back from a three-week, cross-country trip (3500 miles in a MINI-Cooper, two adults + two kids -- wheh!) and found my garden... well, overgrown.

lots of rain, lots of plants, lots of sun = a lot of growth.

i'll post some pics (a peach tree that grew 4', sweet potatoes that have gained sentience, roses gone wild, winter squash from nowhere, etc)... but i have a question that needs answering before i start with the machete: my southern peas (mississippi silver) are the clear victors of the botanical civil war in my garden. i face a harvest of peas of biblical proportions (cubits and cubits)... but i've never harvested souther peas before... how long can i let them go? if i cut them back, will they come back? what to do with a patch of overgrown peas? some of the pods are dried, some of them are just setting peas, etc. when do i pick?
