Bay Laurel questions (w/pics)

Hello,

I have a couple of questions for the Herb Forum experts if I may.

I started 12 Bay Laurel seeds a few months back. Out of the 12, I had five sprout within three weeks. Two of the five have produced double stems from a single seed. My question is; is this common and if so, should I cut back one of the stems or is it ok to let them go as is? Here is a picture of each plant:

My second question has to do with yellowing and browning leaves on a couple of my two year old Laurels. Is this normal or a nutrient problem or a result of a spider mite attack? Here are a couple of pictures:
