That Red Jamacian banana makes beautiful bananas. The food looks delicious! Somebody's going to get tasty birthday cake.

We shared the muffins with our neighbor, and told him it is from our bananas. We have 3 bunches ripening now.

Our dogs get a banana, egg, mix with their food for breakfast.

And that cake is my favorite! Very moist, great bananas with custard and top with coconut. Fit for a King or Queen.:o)

You might want to try it for a next birthday.

Oooh, the cake looks so good! I printed the recipt in case my bananas ripen. they are just now setting. Will they ripen before winter??
My DH's dog loves bananas! She knows better than to come begging to me. But she is johnny on the spot when he starts peeling a banana!
I don't believe that I've ever seen a red banana in the regular grocery...maybe in a special market?

Yummy looking red bananas. We used to get them in the market I worked in while in high school just north of Boston. The produce manager introduced me to many fruits and veggies that I'd never seen or heard of. Muffins look great.

Thanks. Those red bananas are really tasty!. I also have an Indian yellow variety, orange flesh. A cooking Hawaiian banana that is square shape instead of the common shape. And others, as they ripen I will post them.
I made a strawberry-banana jam that came out really good!

Thanks. The one bunch that is ripening now it flowered about 3 months ago. I think you have plenty of time to have yours ripen, before we hit winter.

Now that I think of it, I have only seen red bananas in other places, other countries. I will take a look at Whole Foods when I go there.

Thanks. I live in Mass for a while, and they have fantastic farmers markets! I miss that...
There are a lot of recipes for muffins, but this one is one of my favorites. Sometimes I add the icing like the recipe says, this time I did not put icing and mix the walnuts with the batter.

The reason that they use lemon juice is that the bananas won't get dark. In a cake looks are very important!

I have the ideal recipe for you to try, and remember that any recipe can be cut in half, just like I cut the muffin recipe and I also cut this recipe sometimes.

And about the red bananas, they are not ready yet, I have other bunch ripe. When ready, I will show the inside.

Here is the recipe, I hope you like it.

West Indian Banana Fritters

4 very ripe bananas, peeled
1/2 cup flour
2 eggs, lightly beaten
2 tablespoon of sugar
pinch of salt
oil for frying
confectioner's sugar (optional)

1. In a large bowl, mash the bananas well. Add the flour, eggs, sugar and salt and beat to form a stiffish dough.

2. Preheat the oil. Drop the dough by the spoonful into the hot oil and fry until golden brown,3 to 5 minutes. Drain on paper towels and sprinkle with confectioner's sugar if using. Serve immediately.

Bon Appetit and don't blame if you gain weight.lol

My lil 4, more like 5 lb. Chihuahua loves bannanas, she can be in the bed and I'm on the comp. peeling a nanna and out she comes! She would weigh 10 lbs living with you.

Yum Silvia! I eat muffins for breakfast so we'll be trying them, but like yours, without the frosting.

Fritters are my middle name ;-) Do you use peanut oil so it can be reused without absorbing the flavor of what was cooked in it?

My Passies are doing well, no sign of flowers yet. They just keep on growing, they are about the size of the fence, about 6 ft tall.

I like that they use little sugar, sometimes I tried it with no sugar and they are good too. If we treat ourselves occasionally, it can not do much harm.

I don't use too much oil when frying, only enough to brown. I like to use peanut oil, canola or sunflower. And because I don't use much, I don't reuse it. Sometimes I will finish the cooking after frying in the oven at high temperatures. Like when I do chicken tenders.

We just finished the last of our Jamacian reds. I had smoothies for lunch. I would have tried that fritter recipe I think, it sounds good, as well as the cake. I have another bunch of a noid bananas coming along now.

If you are going to make the cake, it is delicious! I got the coconut milk and the unsweetened coconut in the Oriental market.
When you make the custard, make sure that it is thick enough before you put it in the parchment. They don't explain this very well.
The cake that we made, was finished real fast, everybody like it and did not leave a crumb!

Ok, so I saw all the oohs and awws about the banana fritters, and I've never had one. I wanted to see what all the fuss was about- so I made it this morning. It is an instant hit! My six year old loved it and my waterman(aka hubby)ate it with apple butter. MMMMMMMM. Realy, try Silvia's recipe, you won't be dissapointed.

Thank you Miranda, we will be trying more recipes, that hopefully will become favorites.
