Hardening Off Trees for Winter

I've heard that Evans cherries harden off best for winter and have reduced winter kill if you encourage dormancy by cutting off the water late in the summer. (I have an Evans and it has done really well, although growth is normally quite slow). Since I live in a very dry climate, nearly all water is from irrigation, so managing soil moisture isn't normally a game of chance.

Does anybody have similar experience with other fruit trees? I have several that should be hardy to my area, but I may be zone creeping a little. I was thinking of cutting off the water to let them dry out and encourage dormancy. Recommendations around here are always to make sure trees are well watered before the ground freezes as dryness is seen as a major cause of winterkill, so I was thinking of letting them dry out until the leaves drop this fall, then give the trees a good soaking just before the ground freezes up sometime in November.

Anybody have any thoughts or suggestions?
