Dividing Ponytail Palms- Suggestions and Tips

Hi I have a Ponytail Palm that has 5 caudex/ trunks coming out. I was wondering if anyone has any suggestions for separating these so I can have separate palms? Would fall in coastal los angeles be an OK time to separate them?

Should I just tear them apart, let them callous for a while then replant?

OR

Should I tear them apart then plant right away? I was wondering if this were a better way so that the old roots will not wither away.

Also Some of the caudex' have almost fused together would it be ok to pry them apart or cut them a bit with a knife? Would brushing with cinnamon be OK?

It's in a gallon pot but is already being over crowded.
