Success against the odds! How to pot up cuttings?

They're sprouting!!! I'm so excited! :) Cuttings from my grandfather's 35+ year old clematis from his yard in Calgary, taken at the worst time of year - in full flower from the hardest wood (because that was the only area without flower buds). They shouldn't have grown, but there they are! Four of the cuttings are growing and one is getting out of hand already. I've GOT to get these poor things into proper soil. Right now, they're still in their rooting medium - medium grit and peat moss. I've been putting it off because I'm terrified of hurting the roots while getting them out of that grit. Any advice and recommendations for a) their new potting medium and b) care for this winter indoors would be greatly appreciated! TIA
