Covering exposed roots- trees and shrubs question

This past year I planted quite a few container trees and shrubs.

Over time with watering, the dirt has washed away on the top of the plants exposing the feeder roots.

I would like to fertilize them for the fall but assume if I do not add more dirt to the roots, The fertilizer will burn them.

Is this correct?

What is the best "dirt" to add to cover the roots? I normally would mix mushroom compost with the native soil. Is there something better?
