Why not use huge pots for citruses?

I'm new to this and trying to decide where to site my new dwarf citrus and what size pot to buy.

If I put them on a back patio, they can have excellent sunlight if their soil level is about 3 feet high. I was going to try to find the tallest terra cotta I could find, but I've seen here at this forum that the dwarfs should be kept in smaller pots.

I also see a lot about repotting as the tree gets larger, but what's the reasoning behind not just putting it in a large pot to begin with?

Does this apply only to dwarf citrus? Can you plant regular citrus in larger pots?

If it turns out I can't use a ginormous pot, what's the largest pot I CAN use. I have some 20" wide pots but they're also only 20" tall, and the plants won't get as good of sunlight because of how light comes over the patio.
