A Newbie Asks: Herbaceous Peonies in So. Cal?

I just received 2 big roots - one is a three-eyed Festiva maxima, the other a one-eyed annisquam. I love peonies and have always wanted to experiment with them in my zone. I have read on a site that they will fare ok in coastal So. Cal(perhaps not grow as tall or bloom profusely) as long as I don't plant them as deep as normally recommended in alkaline soil - 1/2 inch as opposed to 2 inches.

I think I picked out a spot that gets good AM sun, and shade in the hottest part of the day. Do I stand a chance if I follow those instructions? Also would chilling in the fridge help at all?
