Garlic questions

I got some nice bulbs for planting at the garlic festival this year. Muxh cheaper than buying online and you can see what you are buying. Can grow some garlic right for next year, instead of last year planting in Spring and getting nothing.

I got an elephant garlic bulb, are these planted in fall for spring harvest like regular garlic or planted in early spring? What is the ideal time to do this? Frost is in 2-4 weeks and a good hard freeze probably not until December but every year is different. I imagine it will be hard to prevent a sprout but it will just die and regrow.

I don't really understand the varieties... I think it is mostly bogus. There are "whites" that are red (including a german white I got) and reds that are white, one batch of one variety looks completely different than another batch, and they all taste the same. In the end I just went with the biggest nicest hardneck bulbs I saw... they are Geman White and Russian Red. And the Elephant.
