Too many scapes

I have harvested my garlic scapes and have WAY too many to use in a reasonable period of time. Best way to store? Plastic bag in the fridge, freeze 'em, or other? Thoughts appreciated.

I pickled mine, last year, and then tossed the picked pieces into stir-fries for the rest of the year. I just made up a vinegar brine from my old red checkered cookbook (Better Homes and Gardens "New" Cookbook circa 1980), cut the scapes to fit the jars, and refrigerated. You could also process them in a boiling water bath, if you had many, many jars.

No such thing as too many scapes! ;-)

Plastic bag in the fridge - will last a good month. If you can't finish eating them within a month you'll need to see a doctor to get your taste buds calibrated ;-)

Yes, go ahead and snap those puppies. They are most tender when under 18" and still curled. Just fry or grill them - you'll have some tasty meals and get larger bulbs to boot. TomNJ

There are primarily three ways daylilies increase, non-sexually. 1. Division. Most modern hybrids increase this way. When the fan scapes, the fan divides into two fans. At some point the fans in the middle of the clump will be deprived of sun and nutrients and will die back. At this point, division is necessary for good bloom as only the outside fans will scape. 2. Stoloniferous. This is a modified stem that grows from the crown 1,2 to 12 inches away, slightly under the soil surface and terminates with a new fan. These plants are very easily to separate/divide and grow in loose clumps that don't need dividing as often. 3. Rhizomaceous. This is also a modified stem that grows from the crown slightly under the soil surface. The rhizome will continue to grow for quite a distance. Small nodes on the rhizome produce new fans/plants. These types of daylilies are often called invasive. The H. fulva family are mostly rhizomaceous. Ditch lilies and Kwanso are examples. This type doesn't need division - maybe root barriers. Ed

This is a fun post. I will say that in my busy working military life, I could get up, shower, shave underarms (daily), legs (3x weekly)makeup (eye shadow, mascara, foundation, powder, lipstick), hair (washed and blow dried, very short), dressed and out the door in 25 minutes. Now, years later, I use far less products and it seems to take far longer. When I was stationed in Spain I could get waxed, from top to toes, for about $7 so I never had to shave of pluck or anything. That made getting ready for work a real breeze. Now, in a typical morning I use: face wash - I use an Oil of Olay-type face cloth. hand wash - Dial Complete on all the sinks, two baths, mudroom, and kitchen. bar soap - I use a liquid soap; DH still uses the bars. :( shampoo - Daily conditioner - Perhaps once a week. hair serum - Never heard of it. hair mouse - No, but I keep a can of hairspray for the 3-4 times I year I might use it. toothpaste - At least five times a day. floss - Yes, but should more often. mouthwash - Listerine; twice a day for gum protection. shaving gel - Ha! The few times I shave I use shampoo. deodorant - Kept in both bathrooms and the bedroom. Wherever I dress I'm ready! body lotion - Rarely, but more so in winter. foot powder/or lotion - Gold Bond all over. face cream - No; but Mom says I should. foundation - Very rarely; 2-3 times a year. blush - I'm taking treatments for Rosacea so I'm good on the natural blush! LOL powder - Very rarely; 2-3 times a year. eyeshadow - Very rarely; 2-3 times a year. eyeliner - No; never liked the look. mascara - Can no longer wear. lipstick - Every day. I love lipstick with colour, but not the pale, dead looking non-color most gals are wearing now. I wear earrings daily, too. I love lipstick and earrings. And that's the daily stuff, add to that the occasional: hair coloring - I stopped coloring three months ago. I'm liking the "salt and pepper," heavy on the salt look! tooth whitening strips - No. nail polish/ base coat/top coat - I cut my nails as short as possible and push the cuticles back once a week. When I worked I kept them short and polished with a pale pink color. I did it my self. I do get medium length dark red gel nails for the Christmas season. nail polish remover - No need cuticle cream - No, but about every four months I'll get a manicure that does not include polish or false nails. They just soak, trim, work off the cuticles and do a hot wax dip. hand lotion - I keep bottles on each sink

Hey, Fori, the repair guy called! At a reasonable time, and I was already gone to meet the cabinet maker and contractor. We had a very productive session. I'll call Mr. G. tomorrow. Meantime, I'm going to post about the cool factor in Appliances. I got 2" of countertop on both sides because the cabinet maker was making pretty frames around the ovens and Advantium. Instead there will be 1" nice frames. The ladder is too tall for the right of the ovens, and I wan't still more counter, so that's going to be a tall pullout like Gizmonike's, only with trays for spices, etc. The little cupboard over the ovens is only going to be about 8" tall anyway, so will have a flip up door rather than swing doors. Should be good for oven pieces. He can do rails and stiles with the bamboo, so the stemware cupboards in the butler's pantry will have inset glass (probably pebble) in the uppers and glass shelves. I think this will cure the bamboo forest problem, because it'll draw the eye away from the slabs. The only view I was ready to go all out Gumby for was standing in the prep area of the island. That, and my mother's jazzy hardware. :) No gumby ;( Glass would be too heavy and unsafe. There will be a message center with an 8" deep flip down writing surface in the center of the pegboard cabinet (on the right from the pantry. We also hashed out a lot of drawer depths, etc., and things look good. I came away feeling very good about the whole thing. I even might have found a top for the island. BTW, sorry for going off on the dye. I'm a fiber artist with respiratory issues so I took that literally. :D RIT's a different story. ;)

Hey, thanks Catherine and Tom! The idea of pickling them sounds very good but I don't have quite that many - maybe 50 twelve inchers. I'll keep them in the fridge and munch for a month.

Here is a great way to munch them Hortster. Put a fat handful into a plastic grocery bag, add a slug of EV olive oil, dash of salt, and a sprinkle of curry powder, and shake well. Then toss onto a hot grill and sear them until they are about half brown/black, turning over once. Droooool!

TomNJ - tried your grilling recipe. Love it! Yum. Didn't char 'em, just "grill marked" 'em. One has to like garlic and curry, but yum. Only heartbreak involved is that the scapes are only available for such a brief time!
Anyway, got to thinking - since they will be in a bag for a month why not dump in 1/4 cup EVOO, 2 tsp. curry powder, and 2 tsp. salt and let 'em marinade? Did this for about 20 scapes. Will let you know!

First there are never too many scapes. We harvest bushels of them on our farm. I sell most of them but if I have any left or a little woody I dehydrate them and make them into a powder. One year I did an experiment to see how long I could keep them . I harvest scapes in May and kept some till September that were still ok for eating. If you are trying to keep them a long time cut the flower top off and it will store longer.

After the recipe I won't need to store them this year. Friends coming over and we will do another batch tonight. These scapes are from my seed crop - next year I will have enough to pickle or dehydrate. What device (and brand) do you use to dry them? Interesting that leaving the immature inflorescence causes them to deteriorate more quickly. TIA.

Scapes plus oil in the fridge may be bad due to the botulism problem that goes with garlic stored in oil. Will let you know how scapes and oil in baggies works in the freezer. lol

Chopped scapes in OO work great in freezer, prechopped with cleaver and very slightly sauteed, cooled and tripple snack bagged and wide mouth bottled. These morsels are great on garlic toast, pastas, omelets...etc. Enjoy!

Mine seem way too hot for eating - like biting into a very pungent garlic clove. They are from German Porcelain plants - are this cultivar's scapes normally that 'strong' or is it something related to my growing conditions? I can only use them as I would garlic cloves, and very strong cloves at that.

Don't know about German Porcelain, mine are rocambole and are wonderful with TomNJ's recipe - not hot, just wonderfully flavorful. But, will try freezing in OO those that are still in the bag!

PS Mine are starting to go dormant in zone 6A, maybe a week or two from harvest. How about YOURS in YOUR ZONE? Kinda curious.

All scapes are a bit hot and garlicky when eaten raw. If you saute or grill them, the heat goes away and they take on their own unique taste. Delicious!

I'm in Central IL (Z5) and I've got scapes probably less than a week from being harvested. I can't wait, this is my first time growing hardneck garlic.

Can you get scapes from soft neck? I assume you can't since I don't see a resemblance on my soft neck.
Next year, I'm trying two hard neck varieties actually grown near my house in Mesa, AZ. Maybe I can enjoy scapes as well. They sound so good!

Softnecks generally do not put up scapes, unless they are stressed.
