Newbie needs serious help with pruning!! with pictures

I have fond memories of roses because my great uncle (and favorite family member!) always grew them. When my husband and I wanted to do something different with the front yard, they were a natural choice. Especially since we moved to Louisiana where the hot humid climate is great for roses. I didn't and still don't know much about them but nonetheless we bought 5 plants and plopped them in the ground. Now I have some pruning issues.

I know how to prune, I don't necessarily know where to cut in regards to future growth and shaping the bush. One of my plants has grown so tall that it's leaning over and can't support it's own weight. I swore I saved the tags that came on them but now I can't find them. I don't even know what kind they are other than I know they were labeled as "cut roses" for arrangements. They're pale pink and super sweet smelling (picture of the flower below). I assumed because they weren't climbing roses they wouldn't need any structural support and the other bush I have like this has much much thicker canes and seems to do better. Half of the "troubled" plant has layed over onto our front porch. So I have two questions:

1. how do I prune it so it doesn't fall over? Do I need to just trim it back until the cane thickens up?

2. How do I prune it so it "fills in"? Does that just come with time?
