It's not too late to prune. But it is kinda hard to give advice on so many trees with somewhat different needs....but I'll try.

The only tree that is really in sad shape is the apricot. Those long scraggly limbs need to be cut back, way back. Most of the other trees aren't in that bad of shape. They are serviceable and will bear a lot of fruit like they are but all could use pruning now.

On all the trees start by removing dead and crossing limbs that are rubbing on each other. Then cut back the overly long limbs that are too tall. You could also shorten any limb that is too long and thin to support fruit. Cut all these back to a bud or shoot headed outward or toward an open space in the canopy. Third, you might want to open up the center to form a vase shaped tree. Most have a current framework that would allow this. After that the trees would benifit from annual summer pruning to remove overly vigorous regrowth. If you prune them now, follow up with one or more prunings in late summer.

The grapes need to be thinned out to leave about 40 buds on each vine that are growing on last years wood. These are the buds that will produce fruit this yr. They need annual pruning in early spring. As they mature you will leave more buds, maybe about 80.

Wish I could prune these with you. I enjoy this job and it would be a lot easier to show you than tell you.

Why does the pear look like a peach?

Prune out branches that are touching/overlapping. I'd try to get some more horizontal growth. Looks like a lot of vertical growth on some of those trees.

Very pretty orchard there. Wish i had that kind of room, open space. I'd have a 100 trees in that same area!

It looks to me like these trees have been previously loved, and don't require such drastic cuts. This one has good basic structure above your marks. But i'm a total novice. Wait for the voices of others.

It's not necessary to cut back that hard, you could, but less would be OK and you will get fruit sooner. Go up about twice that high, about at tops of trees in background, and try mainly to remove those really tall shoots that are way up there by themselves. Also thin out those lower shoots and shorten the remaining ones. In a couple yrs you can have a really nice tree.
