City to country move - what do I need to know about plant choices

We're moving from a small city lot to the country on several acres. There are plenty of mature trees, and more planting space than I know what to do with.

There's a lot of open land, with most surrounding neighbors are on several acres, rolling hills of grass and mature trees, and some unmowed/tree lined areas between the properties for privacy. I have no idea if I should expect deer or other wildlife, and choose my plants accordingly??? I've been in the city most my life.

Also, we're going from city water to well water. The soil is more clay here in the city, out there not so much. But, it's not like I can run a hose across three acres of property. How do you manage watering planting beds on that much land???? I'm planning on adding a variety of trees, mostly ornamental, and probably confine most of my perennial plantings closer to the home - easier to manage.

Any suggestions, ideas, or comments?

And gosh, how long does it take to mow a lawn that covers 3 acres (rider mower of course)???
