Question about stability of new hybrid...

Hi All, I'm an oldie when it comes to Av's but a newbie when it comes to hybridizing. I've done quite a bit of reading on hybridizing but one question lingers...how many seed to full grown plant rotations does it take before you know a new variety is stable? Meaning...1st try is flower to pollen, resulting in seed and eventually blooming plants, 2nd try is pick whatever you like from that batch repollinate (with the same plant??) and hope for identical results, then do it all over again for a 3rd + time with the same plant type??? Does that make ANY sence at all???Sorry I'm really confused about this. Also how do you cull all the rejects, I'd probably deliver them to an old folks home or something, throwing them away would break my heart! :o(
