Soil and 'browns' for use in compost

Hello,

I just finished re-reading Eliot Coleman's "Four-season Harvest" and I have a few questions about composting.

1. Coleman mentions composting doesn't require anything to be purchased and then shortly later suggests purchasing straw for the compost pile. I believe that everything I need should be found in my own yard and my kitchen for composting, therefore, I will not use straw. Is there anything else that can be used instead?

2. Soil - Coleman suggests using a 1 inch layer of soil between the green and brown layers. This might seem simple, but if I use a section of my lawn and dig it up to obtain the soil, then won't I eventually have a big hole? If I dig up some soil from the vegetable beds, won't I be disturbing the soil layers? Coleman says we shouldn't turn over the soil layers in our gardens, just use a broadfork once per year to give it some air.
