what is a bareroot tree supposed to look like?

I am a new gardener, and I ordered some bareroot Asian pear trees from a catalog (my local extension suggested Asian pears for relatively disease resistant fruits, although they also suggested I plant berries instead, which I also planted!). They looked like they were well-packed and moist, but it also looked like the roots had been cut way back, and they had few or no tiny roots. Also, one tree has no branching, it is just one tall central stem. Is this normal? I planted them and want to give them a chance, but this is my first time with bareroot trees and they just look odd. I have planted burlap-ball and potted trees and bareroot roses before with no problem, and the bareroot blueberries I planted had lots of fine roots. Is there a reason that fruit trees are pruned so severely before planting?
