Green House + large scale composting...

I am doing some personal research as a gardener who wants to someday own a greenhouse. I was watching a video on youtube.com (which has tons of cool plant vids!!) and one of the large commercial greenhouses was heating via natural gas which gives them the bi-products of CO2 and water. Water is of course really good for plants and they stored and pumped in the CO2 to help with plant production. Now if I do a green house I would like maximum production with minimal cost. My other new fascination is with composting, I've always had a problem with waste. So after all that...

Does anyone know what the airborne bi products of composting various substances are? I know manure puts out a lot of Ammonia which is bad for plants. What about food waste, yard waste etc? What I am envisioning is the capture of hot composting heat as a possible sole source of extra heat and possibly extra CO2 for plants. A truly green, greenhouse! ;) Any input would be much appreciated!!
