Help selection -120' long line of shrubs

I have 120' along the front where the road is. I have zero privacy.

One the north corner I have a discounted pine and the south corner a tiny tiny mugo pine that will hopefully be big someday:) The 120' is between the two.

The house and yard sits below the road so I need some height.

-I am thinking taller things on the ends, sort of bowing down to the middle which can still be fairly tall shrubs (6-8'), but still essentially an informal looking screen/hedge.

- Since this faces east I am sticking with decidous so as to get more light in winter since I don't need the privacy in winter (not outside).

-I like to plant for birds.

-Clay, dry, very windy, zone 5a, 4b, hot dry windy summers, cold windy winters.

For the taller ends I was thinking

Crabapple and or serviceberry (can I have the ends different or would symmetry be better?)

Then maybe red twig dogwoods or Diablo Ninebark (are these high enough?)

Then forsythia if I can find a large caning one

Then Bridal wreath spirea or shrub roses

I am really having trouble figuring out how to balance the sizes height wise and how many I should fit in lenght wise,

whether I have enough good shrugs for the birds with all season coverage etc.

I look up stuff all the time and go to the nurseries but can't seem to nail it down. Nurseries don't seem to have what I find on the net and I get all sorts of confused and just go round and round.

I am open to other selections but prefer things that aren't too hard to find or require consistent pruning.
